豆干木耳粉丝 Stir Fried Beancurd, Black Fungus and Glass Noodles
材料和过程
加了香菜叶,更好看也增添一些滋味!

豆干木耳粉丝

{材料} 豆干(切块状, 双面煎成微金黄色备用。), 粉丝(泡软),木耳丝,萝卜丝, 肉碎(用一点麻油,胡椒粉和酱油腌制10分钟),蒜碎,小红葱碎和姜碎,香菜叶。

{调味料} 豆瓣酱1茶匙,酱油1汤匙, 黑酱油 ½ 茶匙,蚝油1茶匙, 糖和胡椒粉少许,水5汤匙。

{做法}

1. 起油锅爆香蒜葱姜碎,加入豆瓣酱和肉碎炒至变色后,加入木耳和萝卜丝拌炒1分钟。

2. 然后,加入粉丝和其它调味料拌炒均匀才加入煎好的豆干炒至汁收干。

3. 最后撒上芹菜叶,翻炒一下即可出锅。

Stir Fried Beancurd, Black Fungus and Glass Noodles

{Ingredients} Bean curd (cut into square shape, deep fried till lightly yellow color and set aside), glass noodles (soaked till tender), shredded black fungus, shredded carrot, minced meat (marinate with some sesame oil, pepper and soy sauce for 10 mins), some chopped garlic, shallot and ginger, some celery leaves.

{Seasonings} Bean paste x 1 tsp, soy sauce x 1 tbsp, black soy sauce x ½ tsp, oyster sauce x 1 tsp, some sugar and pepper, water x 5 tbsp.

{Method}

1. Heat up oil to sauté chopped garlic, shallot and ginger till fragrant, add in bean paste and meat to stir-fry till meat change color, add in shredded black fungus and carrot to stir-fry for 1 mins.

2. Then, add in glass noodle and others remaining seasonings to continue stir-frying till mix well, add in fried bean curd to cook till gravy is thicken.

3. Lastly sprinkle up celery leaves, stir-fry till well combined and serve hot.

洋葱香菇鸡肉碎天使意面

难得她逐渐接受回洋葱这味道,偶尔还会加点芹菜叶碎让她尝尝,毕竟经历着“terrible two”的她口味变幻莫测,继续加油!

{材料}

洋葱丁,香菇丁,萝卜碎,甜椒丁, 芹菜叶碎一点(用加了点油和盐的沸水煮2分钟,沥干备用),鸡肉碎,香菇水1汤匙,煎荷包蛋碎,天使意面(用加了点橄榄油和盐的沸水煮5分钟左右,沥干剪成段状备用)

{做法}

1. 起适量的橄榄油锅,将洋葱和香菇丁炒香, 加入一点的萝卜和甜椒丁拌炒一下。

2. 然后,加入鸡肉碎炒至变色后,加入香菇水和意面翻炒均匀。

3. 最后,加入煎荷包蛋碎和芹菜叶碎拌炒均匀即可。(可加或不加,有什么就煮什么咯。)

{Ingredients}

Diced onion, diced mushroom, chopped carrot, chopped bell pepper, minced celery (blanch over with boiling water that add with some olive oil and salt for about 2 mins, drain wel and set aside), minced chicken, soaked mushroom water x 1 tbsp, chopped over hard egg, angel hair pasta (cook with boiling water that add with some olive oil and salt for 5 mins, drain well and cut into sectioned)

{Method}

1. Heat up some olive oil to saute diced onion and mushroom till fragrant, add in pinch of diced carrot and bell pepper to stir-fry for a while.

2. Then, add in minced chicken and stir-fry till change colour only add in mushroom water and cooked angel hair pasta to stir-fry till well combined.

3. Lastly, add in chopped over hard egg and celery to mix well, serve hot.

煮炒的过程
完成品色彩斑斓,赏心悦目啊!
被天使影响,视觉效果近期突然成为焦点,不过一看就知道是偶尔有心情才会如此这般“心机”呀,呵呵。

芹菜三蔬天使意面 

{材料} 天使意面 , 芹菜叶和茎(洗净,切小段状),香菇丝,泡香菇水,甜椒丁,萝卜丝, 鸡肉碎(用一点麻油,胡椒粉和酱油腌制5分钟),蒜碎,洋葱碎。

{调味料} 盐1茶匙,混合香料1茶匙, 糖和黑胡椒粉适量。

{做法}

1. 取一深锅,注入适量的水,少许盐与橄榄油煮开后, 放入面条煮大约7分钟, 捞起过冷水拌入一点橄榄油备用。

2. 再起一锅加了点橄榄油和盐的沸水, 将芹菜叶和茎放入煮2分钟左右捞起沥干备用。

3. 起一大匙橄榄油锅, 放入一点蒜和洋葱碎炒香, 然后加入香菇丝,甜椒丁,萝卜丝和鸡肉碎炒至鸡肉变色放入煮熟的芹菜叶和茎拌炒均匀即可取出备用。(重口味可以炒配料时加些许盐提味。)

4. 热一大匙牛油和1大匙橄榄油锅, 放入剩下的蒜与洋葱碎炒香, 加入面条,泡香菇水与调味料翻炒均匀后,做法3的配料拌一拌即可. (怕太干可以加入1-2汤匙煮面水拌炒。

Angel Hair Pasta with Celery Tri Veggies

{Ingredients} Angel hair pasta, celery (washed, cut into mini bite-sized sectioned), shredded mushroom, soaked mushroom water, diced bell pepper, shredded carrot, minced chicken (marinate with some sesame oil, pepper and soy sauce for 5 mins), chopped garlic and onion.

{Seasonings} Salt x 1 tsp, Italian mixed herbs x 1 tsp, some sugar and black pepper.

{Method}

1. Bring some water with salt and olive oil to a boil; add pasta to boiling water to cook for 7 mins, remove and drain with cold water and toss with some olive oil, set aside.

2. Bring another round of new boiling water with salt and olive oil to cook celery for about 2 mins, drain well and set aside.

3. Heat up pan with some olive oil to sauté some chopped garlic and onion till fragrant, add in mushroom, bell pepper, carrot and minced chicken to stirring till chicken change color, follow by add in cooked celery and continue to stir till well mixed. (If prefer, can add in pinch of salt for better taste.)

4. Heat up 1 tbsp of butter and olive oil to sauté balance chopped garlic and onion, add in pasta, soaked mushroom water and seasonings to stir0fry for a while, then add in method 3 ingredients to mix them well and serve hot. (If too dry, can add in 1-2 tbsp of cooked pasta water.)

换成炒即食面也行,有剩的午餐肉切片煎熟当配料,料多多哟!
明知道这种肉类不宜多吃,但就是偶尔特别想吃吖!而且为了把开罐的午餐肉没变质前给消灭掉,连续两天,先炒起米粉后隔天再炒即食面,哈哈哈!

午餐肉炒米粉

{材料} 米粉1包(泡软,沥干备用),午餐肉(切丁),鸡蛋3粒(加点麻油,酱油和胡椒粉打散备用),蒜碎,青葱丁。

{调味料} 黑酱油1汤匙,酱油3汤匙,蚝油1汤匙,番茄酱1汤匙,清水,糖和胡椒粉适量。

{做法}

1. 起油锅先把蛋炒熟盛起备用。

2. 再加点油入锅,把午餐肉丁煎至7-8成熟时,加入蒜碎和青葱丁炒香。

3. 然后,调入调味料和加入米粉拌炒均匀后,加入鸡蛋拌均即可趁热享用。

Luncheon Meat Fried Vermicelli

{Ingredients} Vermicelli x 1 pack (soaked till tender, drain well and set aside), luncheon meat (diced), eggs x 3 (beaten with some sesame oil, soy sauce and pepper), chopped garlic, diced green onion.

{Seasonings} Black soy sauce x 1 tbsp, soy sauce x 3 tbsp, oyster sauce x 1 tbsp, tomato sauce x 1 tbsp, some water, sugar and pepper.

{Method}

1. Heat up some oil in frying pan to fry the egg mixture till cooked and set aside.

2. Add in some oil in the same pan to fry the diced luncheon meat till almost cooked, add in chopped garlic and diced green onion to stir-fry till fragrant.

3. Then, add in seasonings and vermicelli to stir-fry till well combined, add in the cooked egg and mix well. Serve hot.

材料和过程
如今的午晚餐,大多数配料都是天使和我们的大同小异啦,
现在的午晚餐,娃和我们的配料大多数都是大同小异,就只是煮法有点不一样而已,呵呵!

香菇双蔬鸡肉天使意面

{材料} 天使意面, 香菇3多(泡软,切丝, 泡香菇水留着炒面时用), 生菜丝(用加了盐和一点油的沸水川烫备用),萝卜丝,鸡肉片(用米酒,酱油和胡椒粉腌5分钟),洋葱碎,鸡蛋2粒(加点麻油,酱油和胡椒粉打散,起油锅先炒熟备用), 红番椒碎少许。

{调味料} 鲍鱼汁1茶匙,蒜粉1汤匙,盐和和胡椒粉适量。

{做法}

1. 取一深锅,注入适量的水,少许盐与橄榄油煮开后, 放入面条煮大约7分钟, 捞起过冷水拌入一点橄榄油备用。

2. 热 3大匙橄榄油锅, 放入香菇丝,红番椒碎,与洋葱碎炒香, 加入鸡肉和萝卜丝拌炒一下后再加面条,香菇水,鸡蛋碎与调味料翻炒均匀就OK了。

3. 最好,准备要吃时撒上生菜丝拌一拌即可.

{Ingredients} Angel hair pasta, mushroom x 3 (soaked till tender, shredded, water that used to soak the mushroom kept for later use.), shredded lettuce (blanch over the boiling water that add with some salt and oil, drain well and set aside), shredded carrot, slices chicken (marinate with some rice wine, soy sauce and pepper for 5 mins), chopped onions, eggs x 2(beaten with some sesame oil, soy sauce and pepper, and cooked for later used.), pinch of chili flakes.

{Seasonings} Abalone sauce x 1 tsp, garlic powder x 1 tbsp, some salt and pepper to taste.

{Method}

1. Bring some water with salt and olive oil to a boil; add pasta to boiling water to cook for about 7 mins, remove and drain with cold water and toss with some olive oil, set aside.

2. Heat up pan with 3 tbso of olive oil to sauté shredded mushrooms, chili flakes and chopped onion till fragrant, add in slices chicken and carrots to mix well; follow by add in pasta, mushroom water, cooked eggs and seasonings continue to stirring for well combined.

3. Lastly, garnish with shredded lettuce and serve hot.

蒜葱培根碎天使意面

{材料} 天使意大利面,酥脆培根碎2汤匙,蒜碎,洋葱碎

{调味料} 混合香草碎1茶匙, 蒜粉1茶匙,黑胡椒粉和盐适量。

{做法}

1. 取一深锅,注入适量的水,少许盐与橄榄油煮开后, 放入面条煮大约7分钟, 捞起过冷水拌入一点橄榄油备用。

2. 热一大匙牛油和3大匙橄榄油锅, 放入蒜与洋葱碎炒香, 加入面条与调味料翻炒均匀后,撒上培根碎拌一拌即可. (怕太干可以加入1-2汤匙煮面水拌炒。)

{Ingredients} Angel hair pasta, crushed bacon bits x 2 tbsp, finely chopped garlic and onion.

{Seasonings} Italian mixed herbs x 1 tsp, garlic powder x 1 tsp, some black pepper and salt.

{Method}

1. Bring some water with salt and olive oil to a boil; add pasta to boiling water to cook for 7 mins, remove and drain with cold water and toss with some olive oil, set aside.

2. Heat up pan with 1 tbsp butter and 3 tbsp of olive oil to sauté chopped garlic and onion till fragrant, add in pasta and seasonings continue to stirring for well mixed, garnish with bacon bits and serve hot.

番茄豆腐粉丝肉碎汤

{材料} 番茄2粒(沸水川烫1分钟去皮,切块状),豆腐(切块状),鸡肉碎(用米酒和酱油腌10分钟),粉丝(泡软), 蒜碎。

{调味料} 鲍鱼汁1汤匙,盐和胡椒粉少许。

{做法}

1. 取一深锅,放入一大匙的油爆香蒜碎后,加入鸡肉碎炒熟再下番茄块炒出红水。

2. 然后,注满适量的水,豆腐和调味料煮至沸。

3. 最后,加入粉丝再次煮沸即可。

Tomato, Tofu and Glass Noodle Soup with Minced Pork

{Ingredients} Tomatoes x 2 (Blanch over boiled water, peeled and diced), tofu (cut into bite-sized pieces), ground chicken (marinate with some rice wine and soy sauce for 10 mins), glass noodle (soaked till tender), chopped garlic.

{Seasonings} Abalone sauce x 1 tbsp, some salt and pepper to taste.

{Method}

1. Use a large pot, add in 1 tbsp oil to sauté chopped garlic till fragrant, add in ground chicken to stir-fry till cooked only add in diced tomatoes and cook till tender with light red color water.

2. Then, add in right amount of water, tofu and seasonings, bring to boil.

3. Lastly, add in glass noodle and bring to boil again. Serve hot.

吃了鼎泰丰的葱油拌面后,再次提醒自己好像之前做的葱油拌面味道还不足,应该加些大葱碎或小红葱碎更加像在餐馆吃的那般好滋味。不断尝试几次后,面条卖相虽然不怎么佳,因为懒妈妈图个快字,弄烂点没加调味料前, 拿起来一些拌上江鱼仔粉(通常我会把江鱼仔煎至酥脆后搅拌成粉状,存入冰箱可以耐三周!)汤娃就可以吃啦,但是双葱油真的香很多。

双葱油香菇肉碎拌面

{材料} 面条(川烫好备用), 洋葱丁,青葱丁, 香菇丁(泡软), 肉碎(用一点黑酱油,酱油和胡椒粉腌5分钟), 水煮鸡蛋(切片备用)

{调味料}黑酱油 ½ 茶匙,蚝油1茶匙, 酱油2 汤匙, 糖1茶匙, 水3汤匙(有泡香菇的水更好),和胡椒粉少许,全部混合拌均,用微波炉30秒叮热备用 。

{做法}

1. 起油锅先把香菇肉碎炒香和熟备用。

2. 另起5大匙的油锅以中火爆香大葱和青葱丁至深褐色备用。

3. 然后,把川烫的面条,调味料和葱油拌均后,装盘加入香菇肉碎和水煮蛋当配料即可享用。

Double Onions Mushroom Minced Meat Noodles

{Ingredients} Noodles (boiled, drained well and set aside), diced onion, diced green onion, diced mushroom (soaked till tender), minced meat (marinate with some dark soy sauce, soy sauce and pepper for 5 mins), boiled eggs (sliced)

{Seasonings} Dark soy sauce x ½ tsp, oyster sauce x 1 tsp, soy sauce x 2 tbsp, sugar x 1 tsp, water x 3 tbsp (Use water that use to soak the mushroom if do keep) and some pepper, mixed well and microwave it for 3 seconds.

{Method}

1. Heat up oil to stir-fry diced mushroom and minced meat till cooked, dish up and set aside.

2. Heat up another 5 tbsp of oil to sauté diced onions and green onions under medium heat till dark brown color, remove and set aside.

3. Then, put in cooked noodles, seasonings and onion’s oil in a bowl and mix well, arrange well-mixed noodles with some cooked mushroom meats and eggs slices on a serving plate.

不好意思,回国至今真的忙,茫,盲了三个多月。我竟然酱久不碰部落格啦……难怪情绪频频失控,原来无处抒发一下自己顶不顺的543!

Ok,发完牢骚,言归正传,近期爱吃面线汤,娃的简单用清水煮至软烂加上速冻的鸡汤和蒸熟的蔬菜碎块即可;而偷懒妈妈当然顺便也可给自己弄碗料多的暖暖胃,呵呵!

快手面线汤

{材料} 面线,香菇丝,蒜碎,萝卜丝,猪肉片(用一点酱油和胡椒粉腌5分钟),鱼丸鱼饼,生菜丝,鸡蛋一粒。

{调味料} 酱油1汤匙半,胡椒粉适量。

{做法}

1. 起一汤匙油锅爆香蒜碎, 加入香菇丝炒香后续而加入猪肉片炒至变色,加入萝卜丝翻炒一下,调入酱油呛锅后马上倒入适量清水煮沸。

2. 然后,加入面线,鱼丸鱼饼再次煮沸后敲入鸡蛋和调入胡椒粉煮开来。

3. 最后熄火,加入生菜丝拌至均匀即可食用。

Mee Suah Soup

{Ingredients} Mee Suah, shredded mushroom, chopped garlic, shredded carrot, sliced porks (marinate with some soy sauce and pepper for 5 mins), fish balls and fish cakes, shredded lettuce, egg x 1.

{Seasonings} Soy sauce x 1 ½ tbsp, some pepper.

{Method}

1. Heat up a tbsp of oil to sauté chopped garlic till fragrant, add in mushroom and sliced pork to stir-fry till pork change color, add in carrot, season in soy sauce and then pour in some water and bring it to boil.

2. Then, add in mee suah, fish balls and fish cakes and bring it to boil again, beat in egg and season in some pepper to ensure cook through.

3. Lastly, turn off and add in lettuce to mix them well.

三菇炒面

{材料} 杏鲍菇(切丝), 鸿喜菇, 美白菇,白芝麻(干锅炒香备用),蛋面(用沸水川烫1分钟半过冷水沥干备用),鸡肉碎(加点料酒,酱油和胡椒粉腌5分钟),萝卜丝,鸡蛋2粒(加点麻油和胡椒粉打散), 青葱丁,蒜碎。

{调味料} 黑酱油1茶匙, 酱油3大匙,蚝油1大匙,鱼露1茶匙,水5大匙,红糖和胡椒粉适量, 拌成综合酱汁。

{做法}

1. 起油锅,先将鸡蛋炒熟盛起备用。

2. 再加入3大匙油爆香蒜葱碎,加入鸡肉碎炒至色变,加入萝卜丝和三菇拌炒至出水后,调入综合酱汁。

3. 然后,加入面条,翻炒至均匀和水略干时,加入鸡蛋碎拌炒一下后加入青葱和白芝麻即可。

Mushroom Fried Noodle

{Ingredients} 3 types of mushroom, white sesame, egg noodles (blanch over boiling water for 1 and half min, follow by rinse with cold water, drain well and set aside), ground chicken (marinate with some shaoxing wine, soy sauce and pepper for 5 mins), shredded carrots, eggs x 2 (beaten with some sesame oil and pepper), diced green onions and chopped garlic.

{Seasonings} Black soy sauce x 1 tsp, soy sauce x 3 tbsp, oyster sauce x 1 tbsp, fish sauce x 1 tsp, water x 5 tbsp, some sugar and pepper, mix well.

{Method}

1. Heat up oil to fry the egg mixture till cooked and set aside.

2. Add in another 3 tbsp oil to sate chopped garlic and onion, follow by add in ground chicken to stir-fry till turn color and then add in carrots and mushrooms only pour in well-mixed seasonings.

3. Then, add in noodles to stir-fry till evenly and thicken, add in eggs to continue stir-fry for well combined, lastly, add in green onions and white sesame.

又是趁冰箱剩下材料有点过多之余,随机改一改的快手菜,基本上味道值得一试啦,老杨卖瓜自卖自夸啊,呵呵!有了娃,能不时有机会试一下新食谱已经是我目前生活的一大喜事,快乐真的可以很简单滴。
