菠菜木耳鸡蛋 Spinach with black fungus and egg


菠菜木耳鸡蛋
菠菜又称菠菱菜,飞龙菜,赤根菜等. 据说菠菜不宜和豆腐一起做菜吃, 菠菜里的草酸会和豆腐中的钙结合, 变成让人无法吸收的东西.

菠菜木耳鸡蛋 
{材料} 菠菜x200g, 水发黑木耳x80g, 鸡蛋x2
{调味料} 植物油, , 蒜末, 姜末, 白醋, 香油适量.
{做法}
1.       菠菜洗净,切段; 水发黑木耳洗净,切丝或撕成小片; 分别把它们放入沸水中川烫至熟. 取出放凉. 蒜与姜切末备用.
2.       鸡蛋敲入碗中打散,加少许胡椒粉, 盐搅匀; 鸡蛋液倒入热油锅中, 摊成蛋皮把两面煎熟后取出切丝.
3.       最后把菠菜段, 黑木耳丝/, 鸡蛋丝放入碗内, 加适量盐,蒜末, 姜末, 白醋, 香油(依个人口味)拌匀即可.

{Ingredients} Spinach x 200g, black fungus x 80g, eggs x 2
{Seasonings} Vegetable oil, salt, garlic cloves, chopped ginger, vinegar, sesame oil in proper amount.
{Method}
1.       Rinse the spinach and cut into sections, wash black fungus and cut into strips; then bring a medium pot of water to a boil, scald both of spinach sections and black fungus separately till tender. Drain well and set aside. 3-5 garlic clove and ginger slides finely minced for later use.
2.       Lightly beat the eggs in a bowl, can add little pepper and salt for season purpose. Heat the vegetable oil in a preheated frying pan, then add the egg mixture and tilting the pan to coat the base completely till 2 side  of egg surface turn golden. Remove it and cut into strips.
3.       Lastly, combine the spinach sections, black fungus strips and egg strips in a big bowl; add in salt, chopped garlic, chopped ginger, vinegar, sesame oil in proper amount. Then mix it completely and then serve it.
