丸子鸡蛋蒸 Steamed egg meatballs

丸子鸡蛋蒸

{材料} 水煮鸡蛋 5粒, 香菇1朵(浸软切碎), 小红葱头碎, 猪肉馅与胡萝卜碎适量

{腌料} 盐 ½茶匙, 蚝油1汤匙, 料酒少许

{调味料} 橄榄油1汤匙, 盐 ½ 茶匙, 鸡高汤3汤匙, 栗粉水1汤匙。

{做法}

1. 水煮鸡蛋剥去蛋壳, 切成两半, 将蛋黄取出。

2. 猪肉馅加入腌料, 用筷子顺一个方向搅拌至肉馅上劲后, 手沾少许水将肉馅做成丸子放入鸡蛋内。

3. 放入蒸锅中以大火蒸至肉馅熟后端出, 大约10-15分钟。

4. 起油锅把橄榄油烧热, 放入香菇与萝卜碎炒香后, 调入其它调味料烧开, 最后才用栗粉水勾芡。

5. 然后, 淋在蒸好的肉丸上即可。

Steamed egg meatballs

{Ingredients} Hard-boiled eggs x 5, mushrooms x1 (Soaked and diced), some chopped shallots, minced pork and chopped carrots.

{Marinades} Salt x ½ tsp, oyster sauce x 1 tbsp, some cooking wine.

{Seasonings} Olive oil x 1 tbsp, salt x ½ tsp, chicken stocks x 3 tbsp, cornflour solution x 1 tbsp.

{Method}

1. Shell eggs, cut into half and remove the egg yolk.

2. Marinates minced pork with marinades sauce, use chopstick to mix it well follow clockside until into thick paste, wet hand with some water to make the paste become a meatball size that can put inside egg.

3. Put in steamer to steam under high heat until meatballs is cooked, about 10-15 mins.

4. Heat up olive oil in wok, add in mushroom and carrot to stir-fry until fragrant, season in balances seasonings and bring it to boil, lastly thicken with corn flour solution.

5. Then, pour over the steamed egg meatballs.
