黄瓜炒肉 Shredded Pork with Cucumber

黄瓜炒肉
黄瓜营养价值一般,但含水极高, 且含丙醇二酸, 可抑制糖类转化为脂肪, 被视为减肥特级食品. 它的嫩籽含维生素E较多, 如非必要, 可不必去除. 中医认为其味甘、性凉, 可除热,利尿、解毒等. 一般男女都认为黄瓜有美肤的作用,常有女性将黄瓜片贴在脸上为改善面部皮肤.

黄瓜炒肉

{材料} 猪肉适量(切丝), 黄瓜一条, 葱 一支(切段), 红辣椒一条(切丝), 蒜头瓣x1(切碎), 姜片x 3 (切碎)

{调味料} 香油1 小匙, 酱油1 大匙, 盐1/4 小匙, 糖1/4小匙, 胡椒粉与栗粉适量(腌肉用的); 绍兴酒 1 大匙, 盐1/2 小匙, 鸡粉与栗粉水适量.

{做法}

1.将黄瓜洗净, 削去两头; 去皮切成一半后, 把它切成片状. 放入碗内, 加少许盐腌约两分钟后, 挤去水份.

2.猪肉切丝后, 用香油1 小匙, 酱油1 大匙, 盐1/4 小匙, 糖1/4小匙, 胡椒粉与栗粉适量腌十五分钟.

3.锅中烧热2大汤匙植物油, 放入肉丝炒至变色. 捞起沥油. 锅内留少许油, 放入蒜姜碎炒至香后, 下葱段与红辣椒丝拌匀; 再放入黄瓜片翻炒片刻, 加入绍兴酒, 盐, 鸡粉炒匀. 最后以栗粉水勾芡, 再倒入肉丝拌匀即可.

Shredded Pork with Cucumber

{Ingredients} Boneless pork in proper amount(shredded), cucumber x 1, spring onion x 1 (sectioned), red chili x 1
(shredded), garlic clove x1 (chopped), ginger slices x 3 (chopped)

{Seasonings} Sesame oil x 1 tsp, soya sauce x 1 tbsp, salt x ¼ tsp, sugar x ¼ tsp, pepper and corn flour in proper amount (marinate pork); Shaoxing wine x 1 tbsp, salt x ½ tsp, some chicken powder and corn flour solution.

{Method}

1.Rinse cucumber, cut off the parts from both ends of the cucumber; rub each end with each other few times. Remove skin and cut into half and make it into cube size. Soak in salt water for 2 min and drain well.

2.Marinade shredded pork with sesame oil, soya sauce, salt, sugar, pepper and corn flour for min 15 minute.

3.Heat up 2 tbsp oil to stir-fry shredded pork until turn color, dish up and set aside. Remain some oil in wok, sauté the chopped garlic and ginger until fragrant, add in spring onion and red chili to combine well; then put in cucumber to stir-fry for a while, then add in shaoxing wine, salt, chicken powder to mix well. Lastly, thicken it with corn flour solution, pour in shredded pork to stir well combined.
