九层塔炒饭 Basil Fried Rice

爱吃炒饭, 所以常常乱混搭材料配上隔夜米饭来解决三餐中的其中一餐...

九层塔炒饭

{材料} 隔夜白饭, 九层塔, 红黄橘甜椒丁, 大葱碎, 蒜碎, 红葱碎, 香菇 3 朵( 浸软, 切丁), 萝卜碎, 鸡肉片 ( 用盐, 酱油与胡椒粉腌5-10分钟), 鸡蛋2粒(加少许盐,青葱粒, 胡椒粉与麻油打散备用)

{调味料} 盐1茶匙,酱油1汤匙, 鸡粉1/2茶匙, 糖与黑胡椒粉少许。

{做法}

1. 锅中烧热2大汤匙油, 烧热, 倒入蛋汁翻炒至熟后盛起备用.

2. 油锅中继续加3大匙油烧热, 将大葱, 蒜与红葱碎爆香后, 加入香菇丁, 鸡肉片, 红黄橘甜椒丁与箩卜碎以大火快炒至均匀.

3. 然后,加入白饭与调味料拌炒至均匀后, 再加入九层塔和之前炒熟的蛋拌炒一下即可.

Basil Fried Rice

{Ingredients} Overnight cooked rice, basil, bell pepper (diced), chopped onions, garlic and shallots, shiitake mushroom x 3 (wash and soaked, diced), chopped carrots, chicken slices (marinade with some salt, soy sauce and pepper for 5-10 min), egg x 2 (beaten with some salt, diced green onions, pepper and sesame oil)

{Seasonings} Salt x 1 tsp, soy sauce x 1 tbsp, chicken powder x ½ tsp, some sugar and black pepper

{Method}
1. Heat up 2 tbsp oil in wok, add in eggs mixture and stir fry until cooked. Remove and set aside.

2. Heat up 3 tbsp oil to sauté chopped onions, garlic and shallots till fragrant, add in diced mushroom, chicken slices,bell pepper and carrot to stir fry over high heat till well-mixed.

3. Then, add in overnight cooked and seasonings and continue stir-fry till mixed, then only add in basil and egg to continue stir fry for a while. Transfer to serving plate.
