菠菜蛋 Spinach Eggs

菠菜蛋

{材料} 菠菜适量 (先用加了点橄榄油和盐的沸水川烫一分钟左右,沥干备用),鸡蛋两粒(加点酱油,芝麻油和胡椒粉打散),小红葱碎和蒜碎适量。

{调味料} 高汤5汤匙。

{做法}

1. 起橄榄油锅爆香小红葱碎, 倒入鸡蛋液翻炒至熟备用。

2. 再起油锅爆香蒜碎,放入川烫好的菠菜和高汤拌炒一下,加入鸡蛋翻炒均匀即可。

Spinach Eggs

{Ingredients} Baby spinach (blanch over boiling water that add with some salt and few drops of olive oil),eggs x 2 (beaten with some soy sauce , sesame oil and pepper), some chopped shallots and garlic.

{Seasonings} Broth x 5 tbsp.

{Directions}

1. Heat up some cooking oil to saute chopped shallots till fragrant, add in egg mixture to stir-fry till cooked and set aside.

2. Heat another round of some cooking oil to saute chopped garlic, put in cooked spinach and broth to stir-fry a while, follow by add in cooked egg to sti-fry till well mix. Serve hot.
