三菇炒面 Mushrooms Fried Noodle |
三菇炒面
{材料} 杏鲍菇(切丝), 鸿喜菇, 美白菇,白芝麻(干锅炒香备用),蛋面(用沸水川烫1分钟半过冷水沥干备用),鸡肉碎(加点料酒,酱油和胡椒粉腌5分钟),萝卜丝,鸡蛋2粒(加点麻油和胡椒粉打散), 青葱丁,蒜碎。
{调味料} 黑酱油1茶匙, 酱油3大匙,蚝油1大匙,鱼露1茶匙,水5大匙,红糖和胡椒粉适量, 拌成综合酱汁。
{做法}
1. 起油锅,先将鸡蛋炒熟盛起备用。
2. 再加入3大匙油爆香蒜葱碎,加入鸡肉碎炒至色变,加入萝卜丝和三菇拌炒至出水后,调入综合酱汁。
3. 然后,加入面条,翻炒至均匀和水略干时,加入鸡蛋碎拌炒一下后加入青葱和白芝麻即可。
Mushroom Fried Noodle
{Ingredients} 3 types of mushroom, white sesame, egg noodles (blanch over boiling water for 1 and half min, follow by rinse with cold water, drain well and set aside), ground chicken (marinate with some shaoxing wine, soy sauce and pepper for 5 mins), shredded carrots, eggs x 2 (beaten with some sesame oil and pepper), diced green onions and chopped garlic.
{Seasonings} Black soy sauce x 1 tsp, soy sauce x 3 tbsp, oyster sauce x 1 tbsp, fish sauce x 1 tsp, water x 5 tbsp, some sugar and pepper, mix well.
{Method}
1. Heat up oil to fry the egg mixture till cooked and set aside.
2. Add in another 3 tbsp oil to sate chopped garlic and onion, follow by add in ground chicken to stir-fry till turn color and then add in carrots and mushrooms only pour in well-mixed seasonings.
3. Then, add in noodles to stir-fry till evenly and thicken, add in eggs to continue stir-fry for well combined, lastly, add in green onions and white sesame.
