炸鸡柳 Fried chicken fillet

炸鸡柳
炸鸡是指以油炸方式烹调出来的鸡肉, 有很多种”炸”法, 而且它是很受现代人欢迎的食品之一. 我也是超爱, 还在努力学习如何做出更大程度上酥脆多汁又不油腻的”顶级”炸鸡.

炸鸡柳

{材料} 鸡块适量, 水, 面粉与栗粉适量.

{腌料}蚝油, 麻油, 盐, 糖适量; 然后将姜5-7片与5粒小红葱切碎. (依鸡块的份量大约拿捏)

{做法}

1. 把鸡肉用腌料腌大约2小时.

2. 将腌好的鸡肉沾上面粉与少许栗粉, 然后下水沾湿它,再拿回去沾上面粉与少许栗粉,压压几下,让鸡肉沾满面粉.

3. 烧热油锅, 放入鸡块炸至熟即可. (记得油一定热与此同时要盖过鸡块!)

{Ingredients} chicken pieces, water, flour and corn flour in proper amount.

{Marinades Sauce} Oyster sauce, sesame oil, salt, sugar in proper amount; ginger slices x 5-7, shallots x 5 (chopped) {Depend on the amount of chicken pcs to adjust accordingly}

{Method}

1. Marinade chicken pieces for around 2 hours.

2. Coat marinated chicken pcs with flour and little corn flour, then refresh under water and coat it again with flour and little corn flour, press hard for few times to ensure chicken pcs is firmly coated.

3. Heat up oil in wok, put in chicken pcs to deep fry until cooked. (Oil must be hot and covered chicken pcs!)
