提拉米苏
{材料} 手指饼干适量, 马斯卡彭芝士500克, 温的黑咖啡300ml(甜度依个人口味), Kahlua咖啡酒2大匙(没有可以不放, 味道没那么浓郁而已!), 糖100克, 鸡蛋4粒(蛋黄与蛋白分开), 盐少许, 可可粉适量.
{做法}
1. 在一个大碗里, 把蛋黄和糖不断搅拌至颜色发白与此同时稠的, 加马斯卡彭芝士; 轻轻混匀,直到很僵硬的.
2. 在另一个大碗里, 拌打蛋清和少许盐至湿性发泡, 然后轻轻地拌入马斯卡彭芝士的混合物里边.
3. 准备咖啡, 倒入一个浅盘让它冷却下来, 添加Kahlua咖啡酒搅拌均匀备用. 将手指饼干浸到咖啡盘中, 快速反面再浸一下就排好在容器里.
4. 然后, 把马斯卡彭混合物盖上饼干层, 继续再放一层浸湿咖啡的手指饼干与该混合物.
5. 洒上可可粉, 放入冰箱冷藏至少2-3小时便可享用.
Tiramisu
{Ingredients} Lady fingers in proper amount, Mascarpone cheese x 500g, strong warm coffee x 300ml (sweetened to your liking), sugar x 100g, eggs x 4(separated), a pinch of salt, some bitter cocoa for dusting.
{Method}
1. Beat eng yolks and sugar in a large bowl until appear pale and thick, add the mascarpone cheese and mix gently until very stiff.
2. Beat egg whites and a pinch of salt in a separate bow until soft peaks form, and then gently fold them into the mascarpone mixture.
3. Prepare the coffee, pour it into a shallow dish and let it cool down, add in Kahlua. Dip the lady fingers quickly into the coffee one at a time and arrange them side by side in a serving dish.
4. Cover the biscuits with the mascarpone mixture. Use the lady fingers and the mixture to form one more layer.
5. Dust the top with bitter cocoa powder, refrigerate for at least 2-3 hours before serving.
