自制香菇肉丸子 Homemade Shiitake Mushroom Meatball

宅在家吃火锅,少不了肉丸子。给天使们做,让她们也吃得过瘾些,一年放纵一次还OK啦😂😂😅。今年难得在自己的家过年🧨,更忙了,但是内心深处是真的富裕的,一家人能聚能吃,都健康平安比什么都更实在。

自制香菇肉丸子 

{材料} 腰梅肉碎380克, 香菇两朵(泡软切碎),小红葱碎2-3茶匙,玉米淀粉2茶匙,盐1 ½ 茶匙和胡椒粉适量。 

***买肉时选梅肉来绞碎或自己回家剁碎,梅肉口感很OK。这份量可以做50粒左右的肉丸。 

{做法} 

1. 全部材料准备好后拌均匀,用手搓圆即可。(搓圆后马上速冻冷藏。) 

Homemade Shiitake Mushroom Meatball 

{Ingredients} Minced pork x 380g, dried shiitake mushroom x 2 (soak till tender, chopped), chopped shallots x 2-3 tsp, corn starch x 2 tsp, salt 1 ½ tsp and some pepper. 

 ***Choose tender Loin when buy meat, better taste. This recipe can make 50pcs of meatballs. 

{Directions} 

1. Mix all together, shape it to round ball shape. (Can do in advance to keep frozen in fridge)

今年不烤鸡啦,为即将到来的佳节而特制的烤排骨,提前练习一下,一段时间没烤了叻。Easy Recipe for festive season.

花生酱烤排骨 


{材料} 排骨两条(切成12-15块,先泡清水15分钟去血水) 

{腌料} 蒜碎1汤匙,花生酱1汤匙,酱油1汤匙,黑酱油 ½ 茶匙,番茄酱2汤匙,蚝油 1茶匙, 芝麻油1茶匙, 绍兴酒 ½ 茶匙,五香粉 ½ 茶匙,红糖 1茶匙, 姜碎一点点,白胡椒粉和黑胡椒粉适量。 

{抹面调味料} 蜜糖1汤匙,花生酱1汤匙。 

{做法} 

1. 排骨用腌料腌至少1天。(腌2天会更入味哦) 

2. 将腌好的排骨排好在已铺了烘培纸的烤盘上。 

3. 剩余的腌料加入蜂蜜花生酱拌均匀后,涂抹在排骨的双面。 

4. 放入预热烤箱180◦C,盖上锡纸先烤18分钟左右。 

5. 烤好拿走锡纸,再涂上一层蜂蜜花生酱腌料在排骨的双面,放入烤箱再续烤15-18分钟左右。
 
6. 再将剩余的蜂蜜花生酱腌料涂抹排骨的双面,再烤10-12分钟或至颜色微焦即可(主要是让排骨更有花生味)。 

Peanut Butter Baked Pork Ribs 

{Ingredients} Pork ribs x 2 long strips (clean, lightly cut into 12-15 pieces, soak in water for 15 mins) 

{Marinades} Chopped garlic x 1 tbsp, peanut butter x 1 tbsp, soy sauce x 1 tbsp, black soy sauce x ½ tsp, tomato sauce x 2 tbsp, oyster sauce x 1 tsp, sesame oil x 1 tsp, Shao xing wine x ½ tsp, five spice powder x ½ tsp, brown sugar x 1 tsp, some chopped ginger, white and black pepper. 

{Glazing Seasonings} Honey x 1 tbsp, peanut butter x 1 tbsp. 

{Directions} 

1. Marinate ribs with marinades sauce for at least a day. (2 days more tasty) 

2. Arrange ribs on top of the baking tray that layered with baking paper. 

3. Mix leftover marinades sauce with honey and peanut butter, apply on both sides of ribs. 

4. Pre-heated oven at 180◦C, cover a layer of aluminium foil and bake for 18 mins.

5. Remove aluminium foil, apply another layer of honey peanut butter marinades sauce on both sides of ribs, bake for another 15-18 mins. 

6. Brush again another layer of honey peanut butter marinades sauce on both sides of ribs, continue bake for another 10-12 mins or until turn to dark brown or well cooked (For better peanut taste on ribs).

自制肉丸子豆腐蛋花汤 Homemade Meatball Tofu Egg Drop Soup
材料准备好
一气呵成就煮好了
有了天使们以后,大多时候都会自制猪或鸡肉丸速冻冷藏(可以保鲜1个月左右哦)。要煮时才提前一晚放在冰箱解冻隔天用。

自制肉丸子豆腐蛋花汤

{自制肉丸材料} 猪肉碎200-250克, 小红葱碎1茶匙,姜碎一点,虾两只,鸡蛋液1茶匙,青葱丁1汤匙,玉米淀粉1-2茶匙,盐和胡椒粉适量。全部材料拌均匀,用手搓圆备用。(可以多做一些,搓圆后马上速冻冷藏。)

***买肉时选梅肉来绞碎或自己回家剁碎,梅肉口感很OK。

{材料} 肉丸20粒,鸡蛋2粒(加入一点酱油,胡椒粉和芝麻油打散备用),蛋豆腐1条(切块状),小萝卜条适量(切条状),高汤或清水适量(我做给两个娃的份量就600毫升),蒜碎和小红葱碎适量。

{调味料} 酱油1茶匙,芝麻油 ½ 茶匙,盐和胡椒粉适量, 玉米淀粉水一汤匙。(勾薄芡而已;淀粉1茶匙,水一汤匙)

{做法}

1. 取一深锅,用橄榄油爆香蒜葱碎后加入高汤或清水,肉丸,蛋豆腐和小萝卜条煮沸。

2. 煮沸后,加入玉米淀粉水搅拌一下后,慢慢地淋入鸡蛋液和其它调味料轻轻搅拌均匀后再次煮滚即可。

Homemade Meatball Tofu Egg Drop Soup

{Meat ball Ingredients} Minced pork x 200-250g, chopped shallots x 1tsp, some chopped ginger, shrimp x 2pcs, egg mixture x 1 tsp, diced green onions x 1 tbsp, corn starch x 1-2 tsp, some salt and pepper. Mix all together, shape it to round ball shape. (Can do more in advance to keep frozen in fridge)

***Choose tender Loin when you buy the meat, better taste.

{Ingredients} Meat balls x 20pcs, eggs x 2 (beaten with some soy sauce, pepper and sesame oil), egg tofu x 1 (cut into pieces), some baby carrots (sectioned), some broth or water (for 2 angels’ portions, I use 600ml), some chopped garlic and shallots.

{Seasonings} Soy sauce x 1 tsp, sesame oil x ½ tsp, some salt and pepper, corn flour solution x 1 tbsp (to slightly thicken the soup; corn starch 1 tsp, water 1 tbsp)

{Directions}

1. Use soup pot, heat up a tbsp of olive oil to saute chopped garlic and shallot till fragrant only pour in the broth or water, follow by meat balls, egg tofu and baby carrots, bring it to boil.

2. Then, add in corn flour solution and stirring a while, slowly pour in the egg mixture and bring it to boil again, serve hot.

酸梅酱排骨

{材料} 排骨适量,蒜碎,姜碎。

{调味料} 酸梅酱2汤匙,酱油1汤匙,绍兴酒1茶匙,盐和胡椒粉适量。

{做法}

1. 排骨加入蒜姜碎和用腌料腌15分钟。

2. 然后,腌好的排骨放入蒸锅蒸45分钟左右。

Steamed Plum Sauce Pork Ribs

{Ingredients} Some pork ribs, chopped garlic, chopped ginger.

{Seasonings} Plum sauce x 2 tbsp, soy sauce x tbsp, Shaoxing wine x 1 tsp, some salt and pepper.

{Directions}

1. Marinade pork ribs with chopped garlic, ginger and seasonings for 15 mins.

2. Then, steam the marinated pork ribs in steamer for about 45 mins.

全部材料洗净,该切都切好,放入锅中,加水按键煲即可!
又是煮汤🥣的时间,很希望可以天天都煮汤配饭或粉面类,因为一锅熟很方便,哈哈哈!

高丽菜萝卜香菇干贝排骨汤

{材料} 高丽菜丝,胡萝卜块,排骨适量,香菇两朵(洗净泡软,切丝),干贝适量。

{调味料} 盐少许。

{做法}

1. 全部材料准备好后,放入高压锅中注入适量的水按键煲大约半小时左右,加入调味料拌匀即可趁热享用。

{Ingredients} Shredded cabbage, carrots (sectioned), some pork ribs, shiitake mushroom x 2 (soaked tender, shredded), some dried scallop.

{Seasonings} Salt to taste.

{Directions}

1. Preparing all ingredients, put all into pressure cooker with right amout of water, press “soup” button to cook for about 30 mins, season with salt and serve hot.

又是炒饭,呵呵!

双菇蛋炒饭

{材料} 隔夜白饭3碗,鸡蛋3粒(加点酱油,麻油和胡椒粉打散备用),香菇丝, 平菇丝,猪肉片(加点米酒和酱油腌5分钟),胡萝卜丝,蒜碎,洋葱碎和青葱丁适量。

{调味料} 黑酱油1茶匙,酱油1 ½ 大匙,蚝油½ 大匙,盐和黑胡椒粉少许,Mommy J优质带子粉和有机香菇粉各1/2 茶匙加2汤匙温热水搅拌均匀。

{做法}

1. 起油锅把鸡蛋液炒熟备用.

2. 再热2大匙油锅爆香蒜与洋葱碎, 加入其它材料拌炒大约3-5分钟. (除了白饭和青葱丁.)

3. 然后调入调味料拌炒均匀后, 放入白饭大火拌炒一分钟, 最后再加入鸡蛋碎和青葱丁翻炒均匀即可.

Egg and Mushrooms Fried Rice

{Ingredients} Overnight white rice x 3 bowls, eggs x 3 (beaten with some saoy sauce, sesame oil and pepper), shredded shiitake mushroom, shredded oyster mushroom, pork slices (marinate with some rice wine and soy sauce for 5 mins), some shredded carrots, chopped garlic, chopped onion and diced green onion.

{Seasonings} Black soy sauce x 1 tsp, soy sauce x 1 ½ tbsp, oyster sauce x ½ tbsp, some salt and black pepper, MommyJ premium scallop and organic mushroom food powder x ½ tsp each; dissolve in 2 tbsp warm water and set aside.

{Method}

1. Heat up pan to fry egg mixture cooked, take it out and set aside.

2. Heat up another 2 tbsp of oil to sautee chopped garlic and onion until fragrant, add in others ingredient to stir-fry for around 3-5 mins. (Except white rice and green onion.)

3. Then, follow by add in seasonings, add in white rice to continue stir-fry for 1 min, lastly add in egg and green onion to continue stir-fry until well combined mix and serve hot.

随机应变的又一餐,用尽冰箱仅有的材料凑出的快手餐,卖相很差但味道可是很爱很爱呢!

肉碎茄子盖饭

{材料} 茄子1(洗净切段状,撒些盐泡一会儿,沥干水分备用, 肉碎适量(用米酒,胡椒粉和一点盐腌10分钟), 蒜头碎(1粒), 小红葱碎(1粒), 青葱粒。

{调味料} 蒸鱼酱油2汤匙, 胡椒粉 一点, 糖 1茶匙, 豆瓣酱1/2 茶匙和麻油几滴。

{做法}

1. 茄子先用蒸锅蒸8分钟左右。

2. 锅下油炒香蒜葱, 下肉碎炒和全部调味料炒至熟。

3. 倒入茄子拌炒均匀即可, 把炒好的肉碎茄子配上一碗白饭,趁热食用。

Eggplant Minced Meat Rice Bowl

{Ingredients} Eggplant x 1 (washed and cut into sectioned, sprinkle with some salt and drain it well later before cook), some minced porks (marinate with some rice wine, pepper and salt for 10 mins), chopped garlic x 1 tbsp, chopped shallot x 1 tsp, diced green onion.

{Seasonings} Steamed fish soy sauce x 2 tbsp, some pepper, sugar x 1 tsp, bean sauce ½ tsp and few drops of sesame oil.

{Method}

1. Steam eggplants with steamer for about 8 mins.

2. Heat up some oil in pan to sauté chopped garlic, shallot and onion till fragrant, add in minced pork and seasonings to stir-fry till cooked.

3. Lastly, pour in eggplant to continue stir-frying till well mixed. Serve hot with rice.

{材料} 白玉菇1包(洗净去蒂),肉片(用酱油和胡椒粉腌5分钟),胡萝卜片,大葱丝和蒜碎一些。

{调味料} 酱油1茶匙, 蚝油1/2 茶匙,麻油1/2茶匙,Mommy J有机香菇粉1/2茶匙。

{做法}

1. 起油锅将大葱和蒜碎炒香,加入肉片炒至变色。

2. 然后,加入萝卜片,白玉菇和调味料拌炒均匀或至熟。

White Beech Mushroom Stir-fry

{Ingredients} White beech mushroom x 1 (washed and trimmed the end part), meat slices (marinade with some soy sauce and pepper for 5 mins), carrots (slices), shredded onion, and chopped garlic.

{Seasonings} Soy sauce x 1 tsp, oyster sauce x ½ tsp, sesame oil x ½ tsp, MommyJ organic
mushroom food powder x ½ tsp.

{Method}

1. Heat up oil to saute the onions and garlic till fragrant, add in meat slices and cook till change color.

2. Then, add in carrots, mushrooms and seasonings to stir-fry till well combined or cooked.

Mommy J食物粉是完全可以代替其他调味料的,至少天使们接受得来即可,2岁以下尽量不要放太多,只要天使不抗拒一点点食物粉即可。三岁+的天使因为已经接触过一些外面的食物,食物粉会需要放半茶匙或1茶匙的量咯,不然的话她会投诉不好吃啦,呵呵😄!

三文鱼鸡蛋螺旋面 

{材料} 旋螺面(按照包装袋说明煮熟备用),三文鱼1片(双面煎熟备用), 鸡蛋2(加些许Mommy J有机苋菜粉 和江鱼仔粉打散备用),肉碎(5汤匙清水中加入Mommy J江鱼仔粉,干贝粉,有机苋菜粉和香菇粉),煮熟的南瓜条和青菜碎适量。

{做法}

1. 将肉碎和食物粉水拌均后,放入蒸锅蒸10分钟或至熟。

2. 起油锅把鸡蛋液炒散炒熟备用。

3. 最后,将煮好的意粉加上肉碎,熟三文鱼片,鸡蛋碎,南瓜条和青菜碎拌均后即可食用。

Vegeroni Spirals with Salmon and Egg 

{Ingredients} Some spirals (cook per package directions), salmon fillet x 1 (slightly fry until cooked), egg x 2 (beaten with some MommyJ organic amaranth and anchovy food powder), some minced meats with 5 tbsp of water that mixes with some MommyJ anchovy, scallop, organic amaranth and mushroom food powder, some cooked pumpkin slices and green veggies.

{Method}

1. Steam minced meat with food powdered water for 10 mins or cooked.

2. Heat up oil to stir frying egg mixture till golden yellow color or cooked.

3. Lastly, add in cooked spirals to mix with steamed minced meat, serve with cooked salmon fillet, egg, pumpkin slices and green veggies.

芹菜炒肉片

{材料} 芹菜 (切段状),猪肉片(用蛋清,麻油,酱油和胡椒粉腌10分钟),鱼饼(切片),蒜碎和小红葱碎。

{调味料} 豆瓣酱 ½ 茶匙,鲍鱼汁1茶匙,盐和糖适量。

{做法}

1. 起油锅爆香蒜和小红葱碎, 加入肉片炒至变色。

2. 然后加入芹菜,鱼饼,调味料和2-3汤匙的清水中火煮至汁稍微收干即可。

Celery Stir Fry with Sliced Pork

{Ingredients} Celery (sectioned), sliced pork (marinate with some egg white, sesame oil, soy sauce and pepper for 10 mins), fish cake (sliced), some chopped garlic and shallot.

{Seasonings} Bean paste x ½ tsp, abalone sauce x 1 tsp, some salt and sugar.

{Method}

1. Heat up oil to sauté chopped garlic and shallot till fragrant in frying pan, add in sliced pork and stir fry till change color.

2. Then, add in celery, fish cake, seasonings and 2-3 tbsp water to cook under medium heat till gravy is thicken.

烧肉和蛋真是百搭,想不到加上四季豆一样又是一道家庭味甚浓的快手菜之一。

烧肉四季豆炒蛋

{材料} 烧肉丁,鸡蛋3粒(加一点麻油,酱油和胡椒粉打散备用),四季豆丁,小红葱碎。

{调味料} 黑酱油1/2 茶匙

{做法}

1. 起油锅把小红葱碎炒香,加入烧肉丁和黑酱油拌炒均匀后,加入四季豆丁翻炒一分钟左右。

2. 然后,倒入鸡蛋液翻炒至熟透即可。

Fried Egg with Roasted Pork and French Bean

{Ingredients} Diced roasted pork , eggs x 3 (Beaten with some sesame oil, soy sauce and pepper and set aside), diced French bean, chopped shallots.

{Seasonings} Black soy sauce x ½ tsp

{Method}

1. Heat up some oil to sauté chopped shallots till fragrant, add in diced roasted pork and black soy sauce to stir0fry till well mix, follow by add in French bean and continue stir-frying for about 1 mins.

2. Then, pour in the egg mixture and continue stirring occasionally till cooked.

酱焖肉碎土豆块

{材料} 土豆2颗(去皮,切块状泡水),猪肉碎(用酱油,糖和胡椒粉腌10分钟),姜碎,蒜碎,小红葱碎。

{调味料} 黑酱油1茶匙,酱油2汤匙,蚝油1汤匙,清水5汤匙,麻油和糖适量。

{做法}

1. 起油锅把土豆双面煎至金黄色,捞出备用。

2. 锅中留下少许油爆香姜葱蒜碎,加入肉碎炒至肉碎变色。

3. 加入煎好的土豆和调味料煮至收汁即可。

Soy Braised Potatoes Minced Pork

{Ingredients} Potato x 2 (peeled, cut into bite-size shape and soaked in water), minced pork (marinate with some soy sauce, sugar and pepper for 10 mins), chopped ginger, garlic and shallots.

{Seasonings} Black soy sauce x 1 tsp, soy sauce x 2 tbsp, oyster sauce x 1 tbsp, water x 5 tbsp, some sesame oil and sugar.

{Method}

1. Heat up oil to fry potatoes till both side slightly golden yellow colors, dish up and set aside.

2. Use some leftover oil to sauté chopped ginger, garlic and shallot till fragrant, add in minced pork to stir-fry till change color.

3. Add in the potatoes and seasonings to ensure they well mixed and gravy is thickening.

年关在即,先吃得清淡些,有点“先礼后兵”的意思,呵呵!

高丽菜香菇萝卜肉碎粥

{材料} 白米1杯(洗净), 高丽菜 (洗净切丝),猪肉碎(用一点酱油和胡椒粉腌10分钟), 香菇3朵(泡软,切丁,泡香菇水留着), 胡萝卜丝, 蒜碎,清水适量,橄榄油1茶匙。

{调味料} 酱油1汤匙,蚝油1汤匙,胡椒粉,盐和糖适量。

{做法}

1. 把洗净的白米,橄榄油和适量的清水放入电饭锅先煮成个人喜好绵密的粥。

2. 饭锅煮着粥的同时,起油锅爆香蒜碎,加入香菇丁,肉碎和萝卜丝炒一下至肉变色后,加入高丽菜,香菇水和调味料翻炒均匀即可。

3. 把炒好的才加入煮着的粥当中,搅拌均匀直到饭锅把粥煮熟,趁热享用。(可以放炸好银鱼仔增加咸味!)

Tasty Pork Congee with Cabbage, Shiitake Mushroom and Carrots

{Ingredients} White rice x 1 cup (washed), cabbage (wash and shredded), minced pork (marinate with some soy sauce and pepper for 10 mins), mushroom x 3 (soaked, diced, water that soaked mushroom keep for later used), shredded carrots, chopped garlic, water in right amount, olive oil x 1 tsp.

{Seasonings} Soy sauce x 1 tbsp, oyster sauce x 1 tbsp, some pepper, salt and sugar.

{Method}

1. Put washed white rice; olive oil and water in rice cooker to start cook the porridge.

2. While rice cooker cooking the porridge, heat up oil to sauté chopped garlic, add in mushroom, minced pork and carrots to stir-fry till pork change color, add in cabbage, soaked mushroom water and seasonings to continue stir-frying till well combined.

3. Add in cooked cabbage into the rice cooker, mix well and let the rice cooker cook the porridge till done, serve hot. (Personal preference, can add in some deep fried dried fish to enhance your taste!)

{材料} 白米两杯(洗净备用),清水适量(加入黑酱油,酱油1茶匙和胡椒粉少许搅拌均匀), 排骨(泡清水半小时,沥干备用), 香菇3朵(泡软切丁状),泡香菇水, 姜碎一点,蒜碎和小红葱碎适量。

{调味料} 花雕酒1茶匙, 酱油1汤匙, 蚝油1汤匙,糖和盐适量。

{做法}

1. 起油锅爆香蒜葱姜碎, 加入排骨小火两面煎至微黄后下调味料, 泡香菇水和香菇丁炒均匀。

2. 然后,把白米,炒好的排骨和搅拌均匀的清水放入饭锅中,按下煮饭键煮熟即可趁热享用。

Spare Ribs Rice

{Ingredients} White rice x 2 cups (washed and drain well), water (mix with black soy sauce, soy sauce x 1 tsp and some pepper), pork ribs (soaked in water for 30 mins and drain well), mushrooms x 3 (soaked till tender, diced), soaked mushroom water, a little pinch of chopped ginger, some chopped garlics and shallots.

{Seasonings} Shaoxing wine x 1 tsp, soy sauce x 1tbsp, , oyster sauce x 1 tbsp, some sugar and salt.

{Method}

1. Heat up oil to sauté chopped garlic, shallot and ginger till fragrant, add in pork ribs to fry till both sides bit yellowish, follow by add in seasonings, soaked mushroom water and diced mushroom to stir-fry till well combined.

2. Then, add in white rice, pork ribs and well-mixed water into rice cooker, press down the cook button to cook, serve hot once done cooked.

烧肉酱油蛋炒饭材料与过程

烧肉又时常出现在我家的饭桌上啦,对它可是又爱又恨,虽然指定要买瘦瘦的烧肉,但心知肚明没差啦,呵呵!

烧肉酱油蛋炒饭

{材料} 烧肉(切丁状), 隔夜米饭, 香菇丝(泡软), 萝卜丝, 青菜丝(在加了油和盐的沸水川烫一下,捞起沥干备用), 鸡蛋2粒(加点麻油,胡椒粉和酱油打散),蒜碎,大葱碎。

{调味料} 鸡蛋一粒,蚝油1茶匙, 酱油3汤匙, 黑酱油1汤匙,糖和胡椒粉适量, 搅拌成混合酱料备用。

{做法}

1. 先把隔夜米饭和综合酱汁拌均备用。

2. 起油锅爆香大葱和蒜碎,加入香菇丝炒香后再加萝卜丝和烧肉拌炒一下。

3. 然后,加入一半的蛋液炒至半熟时加入隔夜米饭不停地拌炒, 再将另一半的蛋液加入继续翻炒,将米饭炒散,最后加入青菜丝炒均匀即可。

Egg Fried Rice with Roasted Pork

{Ingredients} Roasted pork (diced), overnight white rice, shredded mushroom (soaked till tender), shredded carrots, shredded green veggies (blanch over boiling water that add with some oil and salt, drain and set aside), eggs x 2 (beaten with some sesame oil, pepper and soy sauce), chopped garlic and onion.

{Seasonings} Egg x 1, oyster sauce x 1 tsp, soy sauce x 3 tbsp, dark soy sauce x 1 tbsp, some sugar and pepper, mix all well.

{Method}

1. Mix the seasonings with overnight white rice, ensure they are well combined.

2. Heat up oil to sauté chopped garlic and onion, add in mushroom stir-fry till fragrant only add in shredded carrot and diced roasted pork.

3. Then, add in half of the egg’s mixtures to cook until half moist only add in white rice and stirring continuously, follow by add in another half of the egg’s mixture, stir-fry for 1-2 mins and add in the green veggies to stir-fry until mix well. Serve hot.

豆酱排骨蒸蛋豆腐

{材料} 排骨(洗净,泡清水半小时或用热水川烫),蛋豆腐1条(切块状),青葱丁适量

{调味料} 豆瓣酱1汤匙, 米酒1茶匙,蚝油1茶匙,盐,鸡粉和栗米粉适量

{做法}

1. 排骨用调味料腌上1小时。

2. 把蛋豆腐和腌好的排骨摆盘,放入煮开了水的蒸锅蒸30分钟左右或至熟,要食用时撒上青葱丁即可。

Steamed Spare Ribs and Egg Tofu with Bean Paste Sauce

{Ingredients} Spare ribs (washed, soaked in water for 30 mins or blanch over boiling water), egg to fu x 1 (cut into sectioned), diced green onion.

{Seasonings} Bean paste x 1 tbsp, rice wine x 1tsp, oyster saucex 1 tsp, some salt, chicken powder and corn flour.

{Method}

1. Marinate spare ribs with the seasonings for at least 1 hour.

2. Then, arrange the egg tofu and spare ribs in steam plate, put in the steamer to steam for 30 mins or till cooked, garnish the green onion while served.

鸿禧菇豆腐玉米鱼丸鱼饼肉碎汤

{材料} 鸿禧菇1包(去蒂,洗净备用), 豆腐一盒(切块状), 玉米粒适量, 猪肉碎(用一点米酒和酱油腌5分钟),鱼丸鱼饼适量(切片状),蒜碎,小红葱碎。

{调味料} 鲍鱼汁一汤匙,盐和胡椒粉适量。

{做法}

1. 取一深锅,用1汤匙油爆香蒜葱碎,加入肉碎炒至熟后,注入适量的水煮至沸。

2. 然后,加入其他材料和调味料再次煮沸即可开吃。(算是快手火锅类哟!)

Hongxi Mushroom Tofu Corn Fish Ball Ground Pork Soup

{Ingredients} Hongxi mushroom x 1 pack (removed bottom parts and cleaned), tofu x 1 pack (diced), some sweet corns, ground pork (marinate with some rice wine and soy sauce for 5 mins), some fish balls and fish cakes (sliced), chopped garlic and shallots.

{Seasonings} Abalone sauce x 1 tbsp, some salt and pepper.

{Method}

1. Use 1 deep pot, add in 1 tbsp oil to sauté chopped garlic and shallots till fragrant, follow by add in ground pork to stir-fry until cooked only add in right amount of water, bring to boil.

2. Then, add in other ingredients and seasonings; bring to boil again. (Fast and easy steamboat type’s soup!)

番茄豆腐粉丝肉碎汤

{材料} 番茄2粒(沸水川烫1分钟去皮,切块状),豆腐(切块状),鸡肉碎(用米酒和酱油腌10分钟),粉丝(泡软), 蒜碎。

{调味料} 鲍鱼汁1汤匙,盐和胡椒粉少许。

{做法}

1. 取一深锅,放入一大匙的油爆香蒜碎后,加入鸡肉碎炒熟再下番茄块炒出红水。

2. 然后,注满适量的水,豆腐和调味料煮至沸。

3. 最后,加入粉丝再次煮沸即可。

{Ingredients} Tomatoes x 2 (Blanch over boiled water, peeled and diced), tofu (cut into bite-sized pieces), ground chicken (marinate with some rice wine and soy sauce for 10 mins), glass noodle (soaked till tender), chopped garlic.

{Seasonings} Abalone sauce x 1 tbsp, some salt and pepper to taste.

{Method}

1. Use a large pot, add in 1 tbsp oil to sauté chopped garlic till fragrant, add in ground chicken to stir-fry till cooked only add in diced tomatoes and cook till tender with light red color water.

2. Then, add in right amount of water, tofu and seasonings, bring to boil.

3. Lastly, add in glass noodle and bring to boil again. Serve hot.

木瓜排骨汤

{材料} 熟木瓜(去皮切块), 排骨适量(泡清水半小时或川烫去血水), 红枣5颗。

{调味料} 盐适量。

{做法}

1. 煮沸一大锅清水, 把全部材料放入燉煮1小时半左右即可。

{Ingredients} Papaya (skinless and cut in pieces), some pork ribs (soaked in water for 30 mins or blanch over boiling water to clean the ribs), red dates x 5.

{Seasonings} Some salt.

{Method}

1. Bring a pot of water to boil, add in all ingredients and stew for 1 and half hours.

黑肉

{材料} 猪肉片 (用黑酱油1茶匙,酱油1-2汤匙, 蚝油1茶匙,黑糖1茶匙,栗米粉1茶匙, 麻油和胡椒粉适量腌至少2小时或隔夜最好。)

{调味料} 黑酱油1茶匙,酱油1茶匙, 水5汤匙,麻油, 胡椒粉和糖少许, 全部拌均备用。

{做法}

1. 起油锅把腌过的肉片煎一煎。

2. 然后下调味料煮至快收干即可。

Black Meat (O Bak)

{Ingredients} Pork slices (marinate with black soy sauce x 1 tsp, soy sauce x 1-2tbsp, oyster sauce x 1 tsp, black sugar x 1 tsp, corn starch flour x 1tsp, some sesame oil and pepper for at least 2 hours or overnight.)

{Seasonings} Black soy sauce x 1 tsp, soy sauce x 1 tsp, water x 5 tbsp, some sesame oil, pepper and sugar, mixed well and set aside.

{Method}

1. Heat up oil to fry marinated pork slices.

2. Then, pour in seasonings and cook till gravy thickens, serve hot.
