干捞面
{材料} 全蛋面2个, 猪肉碎150克, 蒜碎, 小红葱碎,青菜(切片, 用热水加少许油和盐川烫备用), 鸡蛋(煎成荷包蛋备用)和冷水适量。
{面的调味料}黑酱油1茶匙,酱油2汤匙,糖1/2茶匙,蚝油1/2汤匙,麻油1/2茶匙,水,小红葱头油和胡椒粉适量。(一个面的份量)
{猪肉碎的调味料} 豆瓣酱1汤匙, 黑酱油2茶匙, 糖1茶匙, 胡椒粉适量。
{做法}
1. 起油锅热大约5汤匙的油爆香小红葱碎至微黄, 把一半的油和红葱碎捞起待用。
2. 然后, 在另一半的油锅内加入蒜碎与豆瓣酱炒香, 再加入其它调味料和猪肉碎炒均匀与至熟。
3. 煮沸一锅热水, 把面烫熟后过冷水, 沥干。
4. 拿一大碗, 把面的调味料搅拌均匀后, 把面加入混合均匀。
5. 把混合均匀的面摆在一个盘, 将猪肉碎撒上, 加入青菜和蛋即可。
Lo Mien
{Ingredients} Egg noodles x 2, minced pork x 150g, chopped garlic, chopped shallots, veggies (Slices, blanch with hot water that ass with some oil and salt), egg (fry as poach) and some cold water.
{Noodle’s Seasonings} Black soy sauce x 1 tsp, soy sauce x 2 tbsp, sugar x ½ tsp, oyster sauce x ½ tbsp, sesame oil ½ tsp, some water, shallots oil and pepper. (This is for 1 egg noodle.)
{Minced pork’s Seasonings} Bean paste x 1tbsp, black soy sauce x 2 tsp, sugar x 1 tsp, some pepper.
{Method}
1. Heat up 5 tbsp of oil to sauté chopped shallots till yellow brown color, remove out half to use as shallots oil in noodle’s seasoning later.
2. Then, add in chopped garlic and bean paste to continue to stir-fry until fragrant, add in balance of minced pork’s seasonings and minced pork to mix all well and cooked.
3. Bring a pot of water to boil, cook the noodle till tender and soak in cold water and drain it well.
4. Use a big bowl, put all of the noodle’s seasonings in and mix it well, add in cooked noodles.
5. Arrange well mix lomien on a serving plate,put on the mince pork as well as veggies and egg.
