自制肉丸子豆腐蛋花汤 Homemade Meatball Tofu Egg Drop Soup
材料准备好
一气呵成就煮好了
有了天使们以后,大多时候都会自制猪或鸡肉丸速冻冷藏(可以保鲜1个月左右哦)。要煮时才提前一晚放在冰箱解冻隔天用。

自制肉丸子豆腐蛋花汤

{自制肉丸材料} 猪肉碎200-250克, 小红葱碎1茶匙,姜碎一点,虾两只,鸡蛋液1茶匙,青葱丁1汤匙,玉米淀粉1-2茶匙,盐和胡椒粉适量。全部材料拌均匀,用手搓圆备用。(可以多做一些,搓圆后马上速冻冷藏。)

***买肉时选梅肉来绞碎或自己回家剁碎,梅肉口感很OK。

{材料} 肉丸20粒,鸡蛋2粒(加入一点酱油,胡椒粉和芝麻油打散备用),蛋豆腐1条(切块状),小萝卜条适量(切条状),高汤或清水适量(我做给两个娃的份量就600毫升),蒜碎和小红葱碎适量。

{调味料} 酱油1茶匙,芝麻油 ½ 茶匙,盐和胡椒粉适量, 玉米淀粉水一汤匙。(勾薄芡而已;淀粉1茶匙,水一汤匙)

{做法}

1. 取一深锅,用橄榄油爆香蒜葱碎后加入高汤或清水,肉丸,蛋豆腐和小萝卜条煮沸。

2. 煮沸后,加入玉米淀粉水搅拌一下后,慢慢地淋入鸡蛋液和其它调味料轻轻搅拌均匀后再次煮滚即可。

Homemade Meatball Tofu Egg Drop Soup

{Meat ball Ingredients} Minced pork x 200-250g, chopped shallots x 1tsp, some chopped ginger, shrimp x 2pcs, egg mixture x 1 tsp, diced green onions x 1 tbsp, corn starch x 1-2 tsp, some salt and pepper. Mix all together, shape it to round ball shape. (Can do more in advance to keep frozen in fridge)

***Choose tender Loin when you buy the meat, better taste.

{Ingredients} Meat balls x 20pcs, eggs x 2 (beaten with some soy sauce, pepper and sesame oil), egg tofu x 1 (cut into pieces), some baby carrots (sectioned), some broth or water (for 2 angels’ portions, I use 600ml), some chopped garlic and shallots.

{Seasonings} Soy sauce x 1 tsp, sesame oil x ½ tsp, some salt and pepper, corn flour solution x 1 tbsp (to slightly thicken the soup; corn starch 1 tsp, water 1 tbsp)

{Directions}

1. Use soup pot, heat up a tbsp of olive oil to saute chopped garlic and shallot till fragrant only pour in the broth or water, follow by meat balls, egg tofu and baby carrots, bring it to boil.

2. Then, add in corn flour solution and stirring a while, slowly pour in the egg mixture and bring it to boil again, serve hot.

她们口中的favorite food之一,差不多每隔一周一定至少会煮一次的蒸蛋料理,材料大多随机应变。其实生活很简单滴...只要“欲望”别太大!欲望合理了,自然就修剪了满足不了的痛楚。来来来,男女人们,一起努力加强自控力,远离物质社会给出的生活“陷阱”吧!

豆腐鸡肉蒸蛋

{材料} 鸡蛋2粒,豆腐半盒,鸡肉丝适量(可以用米酒和玉米淀粉腌5分钟,不腌也行啦),高汤或清水适量(鸡蛋液 vs 清水= 1 vs 1.5)。

{调味料} 酱油1汤匙,芝麻油1茶匙,胡椒粉适量。

{做法}

1. 全部材料和调味料放入蒸碗中,拌均后入蒸锅蒸12-15分钟左右。

Tofu Chicken Steamed Egg

{Ingredients} Eggs x 2, tofu x ½ box, some shredded chicken (marinate with some rice wine and corn starch for 5 mins or do nothing.), some broth or water (egg mixture VS water = 1 VS 1.5)

{Seasonings} Soy sauce x 1 tbsp., sesame oil x 1 tsp, some pepper.

{Directions}

1. Mix all the ingredients and seasonings well, steam for 12-15 mins.

蛋炒肉碎萝卜豆干的过程 

蛋炒肉碎萝卜豆干

{材料} 五香卤豆干1快(切片), 萝卜片,鸡肉碎, 鸡蛋3粒(加少许盐, 胡椒粉与麻油打散备用),蒜碎, 小红葱碎。

{调味料} 酱油1茶匙,豆瓣酱1茶匙,糖和胡椒粉少许。

{做法}

1. 平底锅烧热1汤匙有, 先把鸡蛋炒碎炒熟备用。

2. 继续用炒蛋的锅热另1茶匙的油, 爆香蒜和小红葱碎后, 加入鸡肉碎,萝卜片,豆干片和调味料拌炒均匀。

3. 然后, 加入熟的鸡蛋碎拌均即成。

Stir-fry Egg with carrot, bean curd and minced chicken

{Ingredients} Five spices bean curd x 1 (sliced), shredded carrot, minced chicken, egg x 3 (beaten with some salt, pepper and sesame oil), chopped garlic, chopped shallots.

{Seasonings} Soy sauce x 1 tsp, bean paste x 1 tsp, some sugar and pepper

{Method}

1. Heat pan with 1 tbsp of oil to fry the egg mixture till cooked, remove and set aside.

2. Add in 1 tbsp of olive oil in the pan that used to fry egg and bring it hot to sauté chopped garlic and shallots till fragrant, add in minced chicken, shredded carrot, five spices bean curd and seasonings to stir-fry till mix well.

3. Then, add in cooked egg pieces to stir fry till well combined and serve hot.

豆酱排骨蒸蛋豆腐

{材料} 排骨(洗净,泡清水半小时或用热水川烫),蛋豆腐1条(切块状),青葱丁适量

{调味料} 豆瓣酱1汤匙, 米酒1茶匙,蚝油1茶匙,盐,鸡粉和栗米粉适量

{做法}

1. 排骨用调味料腌上1小时。

2. 把蛋豆腐和腌好的排骨摆盘,放入煮开了水的蒸锅蒸30分钟左右或至熟,要食用时撒上青葱丁即可。

Steamed Spare Ribs and Egg Tofu with Bean Paste Sauce

{Ingredients} Spare ribs (washed, soaked in water for 30 mins or blanch over boiling water), egg to fu x 1 (cut into sectioned), diced green onion.

{Seasonings} Bean paste x 1 tbsp, rice wine x 1tsp, oyster saucex 1 tsp, some salt, chicken powder and corn flour.

{Method}

1. Marinate spare ribs with the seasonings for at least 1 hour.

2. Then, arrange the egg tofu and spare ribs in steam plate, put in the steamer to steam for 30 mins or till cooked, garnish the green onion while served.

芹菜玉米豆腐排骨汤

{材料} 排骨适量(浸泡清水30分钟去血水),芹菜切段状,玉米粒,红枣5-7颗。

{调味料} 盐和胡椒粉适量

{做法}

1. 取一深锅,注满适量的水和排骨煮沸后,加入其它材料以中火炖煮一小时左右,调入盐后再煮15分钟即可。

Celery Corn Tofu Pork Ribs Soup

{Ingredients} Pork ribs (soaked in water for 30 mins to clear bloody color.), celery (cut into sectioned), corns, red dates x 5-7 pcs.

{Seasonings} Some salt and pepper to taste.

{Method}

1. Use a large pot, fill in right amount of water and pork ribs, and bring to boil only add in others ingredients to cook under medium heat for about 1 hour, seasons in seasonings and cook for another 15 mins.

番茄豆腐粉丝肉碎汤

{材料} 番茄2粒(沸水川烫1分钟去皮,切块状),豆腐(切块状),鸡肉碎(用米酒和酱油腌10分钟),粉丝(泡软), 蒜碎。

{调味料} 鲍鱼汁1汤匙,盐和胡椒粉少许。

{做法}

1. 取一深锅,放入一大匙的油爆香蒜碎后,加入鸡肉碎炒熟再下番茄块炒出红水。

2. 然后,注满适量的水,豆腐和调味料煮至沸。

3. 最后,加入粉丝再次煮沸即可。

Tomato, Tofu and Glass Noodle Soup with Minced Pork

{Ingredients} Tomatoes x 2 (Blanch over boiled water, peeled and diced), tofu (cut into bite-sized pieces), ground chicken (marinate with some rice wine and soy sauce for 10 mins), glass noodle (soaked till tender), chopped garlic.

{Seasonings} Abalone sauce x 1 tbsp, some salt and pepper to taste.

{Method}

1. Use a large pot, add in 1 tbsp oil to sauté chopped garlic till fragrant, add in ground chicken to stir-fry till cooked only add in diced tomatoes and cook till tender with light red color water.

2. Then, add in right amount of water, tofu and seasonings, bring to boil.

3. Lastly, add in glass noodle and bring to boil again. Serve hot.
