鲜贝炒伊面Braised E-fu Noodles with Fresh Scallops
{材料Ingredients}
伊面4块 E-fu noodles 4 pcs
鲜贝适量 Some fresh scallops
肉丝适量 Some shredded meats
胡萝卜丝 Some shredded carrots
鸡蛋4粒 Eggs 4 pcs
玉米淀粉水1汤匙 Corn flour solution 1 tbsp
青葱段适量Some sectioned green onions
小红葱碎适量 Some chopped shallots
蒜碎适量Some chopped garlic
* 银鱼仔适量 Some silver anchovies
*猪油+橄榄油*Lard+olive oil
{调味料Seasonings}
酱油2汤匙Soy sauce 2 tbsp
黑酱油1汤匙Black soy sauce 1 tbsp
蚝油1汤匙Oyster sauce 1 tbsp
番茄酱1汤匙Tomato sauce 1 tbsp
鱼露1茶匙 Fish sauce 1 tsp
料酒1汤匙Cooking wine 1 tbsp
盐½茶匙 Salt ½ tsp
芝麻油1茶匙Sesame oil 1 tsp
胡椒粉适量Some pepper to taste
水350毫升Water 350ml
{做法Directions}
1. 鸡蛋加点盐、芝麻油和胡椒粉打散后加入玉米淀粉水混合均匀待用,肉丝加点蚝油和玉米淀粉腌一下。Beaten eggs with some salt, sesame oil and pepper, stir again with corn flour solution; marinate meats with some oyster sauce and corn starch.
2. 伊面用加了点盐和橄榄油的沸水汆烫1分钟后过凉水待用。Blanch E-fu noodles with boiling water that add with some salt and olive oil for 1 min, drain well, soak in cold water a while, drain well again, and set aside.
3. 起两汤匙油锅爆香蒜葱碎,料酒炝锅后加入银鱼仔、肉丝和鲜贝炒一炒, 接着加入胡萝卜丝再炒一下后倒入一半的鸡蛋液,快凝固时再倒入另一半,接着倒入面条翻炒。Heat up olive oil+lard to saute garlic shallots, season in cooking wine follow by add anchovies, meats and scallops to stir-fry, then add carrots to stir fry a while, pour in half of egg mixture, once almost thicken, pour in another half to cook until almost set, add in noodles to continue stir frying under medium low heat.
4. 接着,调入调味料翻炒均匀。Season in seasonings, and frying until mix well.
5. 最后,加入青葱段拌炒均匀即可。Lastly, add in green onions to mix well. Serve hot.
