  Rainbow fried rice
炒饭有太多的做法. 基本上它就是先煮好的隔夜冷饭, 再加上其它配料而"酝酿"出来的佳肴. 很环保的煮法一种, 至少煮多了的白饭还能创造许多意想不到的香喷喷美味. 男女人们多动动脑袋, 什么样的炒饭都可以出自于你的手中喔!

彩虹炒饭

{材料} 隔夜冷饭x 3 碗, 鸡蛋 x 3粒(1粒泡饭), 火腿/香肠 x 50g(切丁或丝), 青黄红甜椒适量(洗净,切丁), 箩卜适量(切丝), 香菇x 2 朵(浸软, 切丝), 蒜头瓣x2(切碎)

{调味料}盐 1 小匙, 胡椒粉适量, 番茄酱/XO酱3 大匙(选一样, 上图是XO酱; 下图是番茄酱炒出来的)

{做法}

1.隔夜冷饭泡蛋液至少1小时备用.

2.锅中烧热2大汤匙油, 烧热, 倒入蛋汁翻炒至熟后盛起备用.

3.油锅中继续加热, 将香菇丝, 火腿/香肠丝, 青,黄红甜椒丁与箩卜丝放入快炒至均匀后盛起备用.

4.油锅内热1大汤匙油, 爆香蒜碎至金黄色后; 加入冷饭炒至干松, 调入调味料炒匀后, 再加入之前炒熟的材料与蛋拌炒3-5分钟即可.

{Ingredients} Overnight cooked rice x 3 bowls, eggs x 3 (1 to marinate rice), ham/sausage x 50g (diced or shredded), green yellow red pepper in proper amount (clean and diced), carrot in proper amount (shredded), shiitake mushroom x 2 (soaked and shredded), garlic clove x 2 (chopped)

{Seasonings} Salt x 1 tsp, pepper in proper amount, tomato sauce / XO sauce x 3 tbsp(choose 1 sauce)

{Method}

1.Overnight cooked rice to marinate with egg mixture for min= 1 hour. Set aside.

2.Heat up 2 tbsp oil in wok, add in eggs mixture and stir fry until cooked. Remove and set aside.

3.Reheat oil in oil, put in shredded mushroom, ham/sausage, green yellow red pepper and carrot to stir fry over high heat till mixed. Remove and set aside.

4.Heat up another 1 tbsp oil in wok, sauté chopped garlic until golden color; add in overnight cooked rice to stir fry until rice grains separate, add in seasoning and mix well, then add in previous cooked ingredients and eggs to continue stir fry for 3-5min. Transfer to serving plate.
