炒什锦高丽菜
{材料} 高丽菜1/2 粒(切丝), 四季豆x 5-8条(切丝), 箩卜1/3条(切丝), 腐竹(浸软, 撕成段状), 鱼饼x半条(切丝), 瘦肉适量(洗净,切丝), 蛋x1粒(敲入碗中打散), 冬粉(浸软), 蒜头瓣x1(切碎)
{调味料}蚝油2 大匙, 盐x 1 小匙, 花雕酒, 酱油, 胡椒粉适量
{做法}
1. 锅中烧热2大汤匙油, 爆香蒜碎与肉丝; 倒入花雕酒炒至香后, 加入高丽菜丝, 四季豆丝, 箩卜丝, 腐竹段和鱼饼丝拌炒2分钟.
2. 调入蚝油, 酱油与盐; 拌匀后放入冬粉大火炒至水份开始收干时加入蛋液. 可加如少许胡椒粉调味道, 拌炒均匀即可.
Fried Assorted Cabbage
{Ingredients} Cabbage x ½ (shredded), French bean x 5-8 (shredded), carrot x 1/3 (shredded), yuba or bean skin ( soaked and sectioned), fish cake x half pcs ( shredded), lean pork in proper amount(shredded), egg x 1 (beat egg in bowl), glass noodles (soaked), garlic clove x 1 (chopped)
{Seasonings} Oyster sauce x 2 tbsp, salt x 1 tsp, Hua Diao wine, soya sauce, pepper in proper amount.
{Method}
1. Heat up 2 tbsp oil, sauté chopped garlic till fragrant and then put in shredded lean pork to stir-fry till change color; pour in hua diao wine to stir-fry till aromatic, add in shredded cabbage, French bean, carrot, fish cake, yuba or bean skin sectioned; stir-fry till well and mixed for 2 min.
2. Then season it with oyster sauce, soya sauce and salt; mix it well and put in glass noodles to stir –fry over high heat till water start to dry up, add in egg mixture. Can season with some pepper and continue to stir fry a while. Dish up.
