蛋炒蟹肉粉丝 Egg fried crab meat vermicelli

这菜肴与曾几何时宴席上的头盘-五福临门炒鱼翅有点相似耶…

蛋炒蟹肉粉丝

{材料} 鸡蛋6粒, 玻璃生菜50克(切丝), 包菜/高丽菜50克(切丝),萝卜丝3小匙, 青葱1棵(切丝/粒状), 香菇2朵(浸软,切丝), 冬粉/粉丝50克(浸软), 蟹肉80克(可以换成虾肉)

{调味料} 盐½茶匙, 鸡精粉 ½茶匙, 糖1½茶匙, 麻油½茶匙, 绍兴酒1大匙和胡椒粉适量.

{做法}

1. 把鸡蛋打入一个大碗中, 再把所有材料(除了蟹肉)及调味料加入搅拌均匀.

2. 热油锅, 放入蟹肉炒香后, 分几次把搅拌好的所有材料的蛋倒入锅中, 一定要一面倒一面炒, 直到所有蛋都炒碎后即可.

{Ingredients} Eggs x 6, iceberg lettuce x 50g (shredded), cabbage x 50g (shredded), shredded carrots x 3 tsp, spring onion x 1 stalk (shredded or diced), mushroom x 2 (soaked till tender, shredded), vermicelli x 50g (soaked till tender) crab meat x 80g(can switch to shrimp if like)

{Seasonings} Salt x ½ tsp, chicken powder x ½ tsp, sugar x 1 ½ tsp, sesame oil x ½ tsp, Shaoxing wine x 1 tbsp and some pepper.

{Method}

1. Beat eggs in a big bowl; add in all the ingredients (except crab meat) and seasonings to stir well evenly.

2. Heat up oil, add crab meat to stir-fry until fragrant, pour in the egg mixtures separately by few times, must continue to stir-fry while pouring until the eggs is fully cooked, transfer to serving plate.
