Tomato Enoki Mushroom Noodle
基本材料

番茄金针菇拌面

{材料} 番茄1粒(用热水川烫一下去皮,切丁备用),金针菇1包(去蒂,洗净备用),鸡蛋2粒(加点酱油和胡椒粉煎成荷包蛋备用),全蛋面2个,蒜碎,小红葱碎,红辣椒碎,香菜碎一点(过热水烫一下用来点缀,不放也行!)

{调味料} 黑酱油1茶匙, 酱油1汤匙,番茄酱1 茶匙,水 ½ 汤匙, 糖和胡椒粉少许, 拌成综合酱汁备用。

{做法}

1. 起2大匙热油锅爆香蒜葱与辣椒碎后,淋入综合酱汁备用。

2. 水加少许盐与油煮开后, 放入面条煮大约2-3分钟.

3. 用煎荷包蛋的油锅将蕃茄丁炒出红油后,加入金针菇炒软即可。

4. 把面条放进一大碗里调入做法1的调味料和做法3的材料搅拌均匀。

5. 最后把面条移到食用盘上,撒上香菜碎和加入荷包蛋即成。

Tomato Enoki Mushroom Noodle

{Ingredients} Tomato x 1 (blanch with boiling water for skin-off, diced), enoki mushroom x 1 pack (trim bottom part and washed), eggs x 2 (fried it and set aside), eggs noodle x 2, chopped garlic, shallot and red chili, some cilantro (blanch over hot water, optional)

{Seasonings} Black soy sauce x 1 tsp, soy sauce x 1 tsp, tomato sauce x 1 tsp, water x ½ tbsp, some sugar and pepper, mix all well in a small bowl.

{Method}

1. Heat up 2 tbsp of oil to sauté chopped garlic, shallot and red chili till frangrant, pour in the mixture bowl and stir-well.

2. Bring some water with salt and oil to a boil; add noodles to boiling water to cook for 2-3 mins, stirring occasionally.

3. Use back the frying pan to fried egg to continue stir-fry for diced tomatoes and enoki mushroom till tender.

4. Put in the noodles into a big bowl for mix-well with method 1 seasonings and method 3 cooked ingredients.

5. Lastly, transferring the noodles to serving plate, sprinkle some cilantro on top of it and add in the over-hard eggs.
