青椒小鱼干炒蛋  Fried Eggs with Bell Pepper and Whitebait

青椒小鱼干炒蛋

{材料} 小鱼干适量(洗净备用) , 鸡蛋3个(打散加点盐, 麻油与胡椒粉少许, 搅拌均匀), 青椒块, 萝卜丁,小红葱碎适量。

{调味料} 绍兴酒½小匙.

{做法}

1. 油锅烧热, 下小鱼干和小红葱碎爆香,倒入胡萝卜丁翻炒几下后加入青椒和调入绍兴酒呛锅, 倒入鸡蛋液, 大火煎到蛋液底部凝固后翻身再煎15秒, 弄碎蛋盛起备用。

Fried Eggs with Bell Pepper and Whitebait

{Ingredients} Some whitebait (washed), eggs x 3 (Beat it and add in some salt, sesame oil and pepper), some dicedgreen bell pepper, diced carrots and chopped shallots.

{Seasonings} Shaoxing wine x ½ tsp.

{Method}

1. Heat up pan, add in whitebait and choppedshallots, follow by diced carrots to stir-fry a while only add green bell pepper and seasoning, pour in the egg mixture to cook under high heat until barely set, turn over to fry for another 15 sec and then crumble the egg, remove and transfer to serving plate.
