茄子🍆拌米粉,为了提高孩子们对茄子的食欲,炒了家常米粉搭配。Eggplant + fried vermicelli to increase kid’s appetite.
茄子炒米粉
{茄子材料} 茄子1条(洗净去块,泡盐水),鸡肉丝适量,蒜碎、姜碎和小红葱碎适量。
{茄子调味料}豆瓣酱1 汤匙, 鲍鱼汁1汤匙,酱油½汤匙,清水30毫升。
{米粉材料}猪油2汤匙,鸡蛋4粒(加一点酱油,胡椒粉和芝麻油打散备用),米粉(川烫½分钟,沥干备用),萝卜丝,杏鲍菇丝适量,青菜丝适量,蒜碎和小红葱碎适量。
{米粉调味料}黑酱油1汤匙,酱油2汤匙,蚝油1茶匙,鱼露1茶匙,高汤 ½ 碗,芝麻油一茶匙,红糖 ½ 茶匙,盐和胡椒粉适量,混合搅拌均匀。
{做法}
1. 起橄榄油锅爆香小红葱碎,先把鸡蛋炒熟备用。
2. 再另起油锅,放入鸡肉丝拌炒后,爆香豆瓣酱、姜碎、蒜碎和小红葱碎,加入茄子块拌炒一下后,加入清水和调味料炒均,盖好焖煮至软,盛起待用。
3. 起2汤匙猪油锅,加入杏鲍菇丝,蒜和葱碎拌炒均匀。
4. 加入萝卜丝和一半的调味料炒一下后加入米粉和另一半的调味料翻炒均匀,盖好焖煮片刻。
5. 加入青菜和鸡蛋拌炒一下后,加入茄子翻炒均匀即可出锅。
Eggplant Fried Vermicelli
{Eggplant Ingredients} Eggplant 1 pcs(washed, cut into pieces and soaked in salt water), shredded chicken, chopped garlic, shallot and ginger.
{Seasonings} Bean paste 1 tbsp, abalone sauce 1 tbsp, soy sauce ½ tbsp, water 30 ml.
{Vermicelli Ingredients} Pork lard 2 tbsp, eggs 4pcs (beaten with some soy sauce, pepper and sesame oil), vermicelli (blanch over hot boiling water for ½ min, drain well and set aside), shredded carrots, shredded king oyster mushroom, shredded green veggies, chopped garlic and shallots.
{Seasonings} Black soy sauce 1 tbsp, soy sauce 2 tbsp, oyster sauce 1 tsp, fish sauce 1 tsp, broth ½ cup, sesame oil 1 tsp, brown sugar ½ tsp, some salt and pepper, mix well.
{Directions}
1. Heat up oil to saute some chopped shallots, pour in egg mixture to stir-fry till cooked and set aside.
2. Heat up another round of oil to stir-fry shredded chicken a while, follow by add in bean paste, chopped ginger, garlics and shallots to continue stir fry untill fragrant, add in eggplants to stir-fry a while, add in water and left over seasonings to mix well, cover and simmer cook for a while.
3. Heat up 2 tbsp of pork lard, add in shredded king oyster mushroom, garlic and shallots to mix well.
4. Add in shredded carrots and half of the seasonings to stir-fry a while only add in vermicelli + another half of seasonings to continue stir-frying until drying up.
5. Add in cooked green veggies and eggs and mix them well, follow by add in cooked eggplants to mix well and enjoys.
