肉碎萝卜丝炒冬粉
{材料} 冬粉(浸软),鸡肉碎(用盐与胡椒粉腌5分钟),萝卜丝, 青葱丁, 鸡蛋1粒(加点盐, 胡椒粉与麻油, 打散成蛋液备用), 蒜碎, 小红葱碎适量。
{调味料} 酱油2 大匙,黑酱油1/2 大匙,绍兴酒1小匙,蚝油1/2 大匙,盐与胡椒粉少许。
{做法}
1. 冬粉用沸水加点盐川烫一分钟或至七八分熟就捞起备用。
2. 热油锅爆香蒜与小红葱碎后,加入鸡肉碎炒至变色.
3. 然后,加入萝卜丝拌炒均匀再淋入绍兴酒炝锅, 调入其它调味料,加一点水和冬粉拌炒均匀.
4. 加入蛋液, 不停搅拌均匀,加入青葱丁炒匀即可享用.
Glass Noodles with Minced Pork and Carrot
{Ingredients}Glass noodles (soaked), ground chicken (marinated with some salt and pepper for 5 mins), some shredded carrots, diced green onion, egg x 1 (beats egg in bowl; add in little salt, pepper and sesame oil), garlic cloves x 2 (chopped), shallot x 1 (chopped)
{Seasonings} Soya sauce x 2 tbsp, dark soya sauce x ½ tbsp, Shaoxing wine x 1 tsp, oyster sauce x 1/2 tbsp, some salt and pepper.
{Method}
1. Put the glass noodles into boiling water with some salt to cook for 1 mins, drain it dry and set aside.
2. Heat up some oil to sauté chopped garlic and shallot till fragrant, add in ground chicken to stir-fry till change color.
3. Then, add in shredded carrot and shaoxing wine to stir-fry until aromatic, season with balance of the seasonings, add in some water and glass noodles to mix well.
4. Lastly add in egg mixture, continuously stirring till cooked, add in green onion to mix well and ready to serve.
