辣酱蒸鱼

{材料} 鱼片 (洗净,用一点盐和胡椒粉腌10分钟), 姜片, 青葱丝,红辣椒碎, 蒜碎,小红葱碎,青葱丁。

{调味料} 蒸鱼酱油1 汤匙, 蚝油 ½ 茶匙, 料酒1茶匙,糖少许, 拌成酱汁备用。

{做法}

1. 把鱼片摆入蒸盘中,加入姜片,青葱丝和一点红辣椒碎,盖上一层保鲜膜放入蒸锅内大火蒸上8分钟。

2. 起油锅,爆香蒜葱碎至深金黄色后,加入青葱丁拌炒一下备用。

3. 蒸好的鱼片,拿掉保鲜膜和姜片后,淋入调味料和做法2的蒜葱油后再放入蒸锅蒸多1-2分钟即可。

{Ingredients} Fish fillets (wash, marinate with some salt and pepper for 10 mins), ginger slices, shredded green onion, chopped red chili, chopped garlic, chopped shallot, diced green onion.

{Seasonings} Steam fish soy sauce x 1 tbsp, oyster sauce x 1 /2 tsp, shaoxing wine x 1 tsp, some sugar, mix well and set aside.

{Method}

1. Put fish fillet in steam plate; add in ginger slices, shredded green onion and red chili on top , cover with a layer of plastic wrap to steam under high heat for 8 mins.

2. Heat up oil to sauté chopped garlic and shallot till deep golden brown color, add in diced green onion to stir-fry a while and dish up.

3. Throw away the plastic wrap and ginger slices after fish is cooked, pour in the seasoning and method 2 ingredients and steam for another 1-2 mins, serve hot.
