滑炒鱼片
{材料} 鱼肉片x 500g, 鸡蛋白1 个, 红,黄/青甜椒(切片), 姜片 x 5(切碎), 蒜头瓣x2(切碎), 青葱 x 1 支(洗净切小段),
{调味料} 盐x 1/4小匙, 米酒和栗粉适量 (腌鱼肉); 盐, 糖1/4小匙, 鸡高汤x 半杯, 香油少许, 鸡粉, 胡椒粉与栗粉水适量.
{做法}
1.鱼片洗净, 用盐, 米酒, 蛋白和栗粉腌十五分钟, 备用.
2.锅内烧热适量植物油, 放入腌好的鱼片滑透捞起待用.
3.锅内留少许油, 爆香蒜姜碎与葱段后, 倒入高汤, 调入盐, 糖, 胡椒粉拌匀.
4.然后, 放入鱼片炒匀, 再调入鸡粉. 再来加入红,黄.青甜椒片拌炒片刻, 最后淋上香油,以栗粉水勾芡即可.
Fried Fish Fillets
{Ingredients} Fish fillet x 500g, egg white x 1, red, yellow/green bell pepper(sliced), ginger slices x 5 (chopped), garlic cloves x 2 (chopped), spring onion x 1 stalk ( wash and sectioned)
{Seasonings} Salt x ¼ tsp, some rice wine and corn flour (marinated purpose); salt, sugar x ¼ tsp, chicken stock x half cup, some sesame oil, chicken powder, pepper and corn flour solution.
{Method}
1.Clean up fish fillet, marinade with salt, rice wine, egg white and corn flour for 15 minute.
2.Heat up oil, blanch marinated fish fillets over the hot oil and set aside.
3.Remain some oil in wok, saute the chopped garlic, ginger and spring onion till fragrant, pour in chicken stock, seasoned with salt, sugar and pepper and mix it well.
4.Then, add in fish fillet and stir-fry thoroughly, seasoning with chicken powder. Add in bell pepper to stir-fry a while, lastly add in sesame oil and thicken up with corn flour solution. Ready to serve.
