三丝炒方便面
{材料} 方便面x 2 块, 鸡胸肉 x 20g (切粗丝), 鸡蛋x 1 粒 (加点盐, 胡椒粉与麻油, 打散成蛋液备用), 蒜头瓣x 2(剁碎), 小葱头x 1 粒(剁碎), 木耳, 箩卜与高丽菜适量(切丝)
{调味料} 绍兴酒1小匙, 黑酱油1/2 大匙, 酱油 2 大匙, 蚝油1大匙
{做法}
1. 方便面用沸水加点盐川烫两分钟至七八分熟就捞起备用.
2. 热油锅, 油可多一点; 加入蛋液, 不停搅拌单面煎至金黄色就捞起去油备用.
3. 用刚留下的蛋香油, 加入鸡肉丝炒至变色备用.
4. 少许油, 爆香蒜葱碎, 加入木耳丝拌炒. 淋入绍兴酒炝锅, 然后加入酱油, 黑酱油, 蚝油, 一点水与面条拌炒均匀.
5. 最后, 加入蛋碎与肉丝炒匀即可.
Three Vegetable Shreds Fried Instant Noodles
{Ingredients} Instant noodles x 2, chicken breast x 20g (cut into thick shredded), egg x 1 (beats egg in bowl; add in little salt, pepper and sesame oil), garlic cloves x 2 (chopped), shallot x 1 (chopped), fungus, carrot and cabbage in proper amount (shredded)
{Seasonings} Shaoxing wine x 1 tsp, dark soya sauce x ½ tbsp, soya sauce x 2 tbsp, oyster sauce x 1 tbsp
{Method}
1. Slightly cook the instant noodles over the boiling water for 2 min, drain the water and set aside.
2. Heat up some oil, oil can be little bit more; pour in egg mixture and fry until barely set. Remove.
4. Use little oil to sauté the chopped garlic and shallot until fragrant, add in shredded fungus. Then, add in shaoxing wine, follow by soya sauce, dark soya sauce, oyster sauce, a little water and noodles to stir-fry till well mixed.
5. Lastly add in the egg and shredded chicken to mix well and serve.
