家常炒粘米丸 Home-style Fried Rice-flour Noodle
拌炒过程
家常炒粘米丸

{材料} 粘米丸 (过热水川烫一下即可, 过冷河备用),豆芽(洗净),鸡肉片(用少许酱油,米酒和胡椒粉腌上10分钟), 鱼豆腐丝, 萝卜丝,鸡蛋2粒,蒜碎, 红辣椒碎。

{调味料} 酱油3汤匙,黑酱油1大匙,豆瓣酱1茶匙,蚝油1茶匙,鱼露1茶匙, 糖1 ½ 茶匙, 麻油与胡椒粉少许混合均匀在一小碗中备用。

{做法}

1. 热3大匙油爆香蒜与辣椒碎, 放入鸡肉片, 一半的豆芽,鱼豆腐和萝卜丝拌炒一下。(油一定要很热哦!)

2. 把粘米丸加入, 随即淋入2大匙的调味料, 大火快速翻炒均匀后推去一边。

3. 转中火淋入1大匙油把蛋打入, 再淋上调味料与胡椒粉在鸡蛋上; 把粘米丸盖在蛋上, 再加入剩下的调味料与豆芽继续翻炒均匀即可。

Home-style Fried Rice-flour Noodle

{Ingredients} Rice flour noodle (Blanch over hot water, rinse with cold water and set aside.), bean sprout (washed), chicken slices (marinate with some soy sauce, rice wine and pepper for 10 mins.), shredded fish tofu, shredded carrot, eggs x 2, chopped garlic and red chili.

{Seasonings} Soy sauce x 3 tbsp, black soy sauce x 1 tbsp, bean paste x 1 tsp, oyster sauce x 1 tsp, fish sauce x 1 tsp, sugar x 1 ½ tsp, some sesame oil and pepper, mix all together in a small bowl and set aside.

{Method}

1. Heat up 3 tbsp oil to sauté chopped garlic and chili till fragrant, add in slices chicken, half of the bean sprouts, follw by fish toufu and carrots to stir-fry evenly. (Must ensure the oil is hot!)

2. Then add in rice flour noodle follow by 2 tbsp seasonings, stir-fry over high heat to mix them well and push to one side.

3. Turn to medium heat, add in 1 tbsp lard and crack the eggs in with some seasonings and pepper on top; flip the rice flour noodle to cover the egg, add in another half of bean sprouts and balance of seasonings to continue stir-fry quickily till well combined. Serve immediately.
