什锦炒粉丝 Stir Fried Glass Noodle with Vegetables

什锦炒粉丝

{材料} 粉丝(泡水至少四小时备用),鲜腐皮(浸软), 鸡肉片(用少许酱油,米酒和胡椒粉腌上10分钟), 鸡蛋2粒(加点盐,胡椒粉与麻油打散,金针菇(洗净),萝卜丝,小白菜(切丝),蒜碎,小红葱碎与姜碎。

{调味料} 酱油1汤匙,黑酱油 ½ 茶匙,豆瓣酱1茶匙,糖1茶匙, 盐 ½ 茶匙,胡椒粉少许,清水3-5大匙。

{做法}

1. 起油锅爆香蒜葱姜碎,加入鸡肉片炒至色变才加入萝卜丝与金针菇拌炒一下。

2. 接着,倒入一半的蛋液,炒至半熟后加入粉丝,鲜腐皮与调味料炒煮均匀。

3. 将其余的蛋液与小白菜丝加入以小火慢煮至剩下些许汤汁即可关火, 让粉丝吸净锅中汤汁即可装盘趁热享用。

Stir Fried Glass Noodle with Vegetables

{Ingredients} Glass noodle (soak in water for at least 4 hours), fresh bean curd sheet (soaked), slices chicken (marinate with some soy sauce, rice wine and pepper for 10 mins), eggs x 2 (beaten with some salt, pepper and sesame oil), enoki mushroom (washed), shredded carrots, shredded green vegetable, chopped garlic, shallot and ginger.

{Seasonings} Soy sauce x 1 tbsp, dark soy sauce x ½ tsp, bean paste x 1 tsp, sugar x 1 tsp, salt x ½ tsp, some pepper, water x 3-5 tbsp.

{Method}

1. Heat up oil to sauté chopped garlic, shallot and ginger till fragrant, add in slices chicken, carrots and enoki mushroom to stir-fry till aromatic.

2. Follow by add in half of egg mixture, stir-frying until half cooked only add glass noodle, fresh bean curd sheet and seasonings to cook till well mixed.

3. Add in the rest of egg mixture and green vegetable, continue to cook over low heat till thick and turn off the fire. Dish up.
