葱姜炒螃蟹 Ginger Onion Fried Crabs |
{材料} 螃蟹x 4, 洋葱x 1 粒(切丝), 姜 x 25g(切丝), 蒜头x10g(剁碎)
{调味料} 水/高汤x 1杯, 盐x 1茶匙, 酱油x 2茶匙, 鸡精粉x 1茶匙, 料酒x 1大匙, 香油少许, 糖x 1茶匙, 猪油x2大匙, 栗粉水x 2大匙, 胡椒粉适量
{做法}
1. 螃蟹洗净后, 切开两块状. 热2大匙油锅, 下洋葱块翻炒至软后捞出备用.
2. 锅内略留适量的油, 爆香姜丝与蒜碎后; 加入做法1的洋葱块, 待出香味时, 放入蟹块炒匀. 依次炝料酒, 加水/高汤, 盐, 糖, 酱油, 鸡精粉; 加盖略烧至锅内水份将干时, 下猪油, 香油, 胡椒粉炒匀. 最后, 用栗粉水勾芡即可.

{Ingredients} Crab x 4, onion x 1 (shredded), ginger x 25g (shredded), garlic x 10g (chopped)
{Seasonings} Water / chicken stock x 1 cup, salt x tsp, soya sauce x 2 tsp, chicken powder x 1 tsp, Chinese rice wine x 1 tbsp, a little sesame oil, sugar x 1 tsp, lard x 2 tbsp, corn flour solution x 2 tbsp, pepper in proper amount.
{Method}
1. Rinse and clean up crabs, cut into half. Heat up 1 tbsp oil, stir fry shredded onions till soft and set aside.
2. Leave some oil in wok to stir fry shredded ginger and chopped garlic until fragrant; add in method 1 onion, mix well, put in crabs. By sequence put in rice wine, water/ chicken stock, salt, sugar, soya sauce, chicken powder; cover with lid to cook until water in wok almost dry, add in lard, sesame oil, pepper to mix well. Lastly, thickening with corn flour solution.
