鲜腐皮炒粉丝 Fresh Beancurd Sheet Glass Noodles


鲜腐皮炒粉丝

{材料} 粉丝(泡水至少3-4小时),鲜腐皮 (泡软备用),香菇2朵(泡软切丝), 肉碎(用一点酱油和胡椒粉腌5分钟), 金针菇1包(去蒂洗净),蒜碎,小红葱碎,姜碎和红辣椒碎。

{调味料} 豆瓣酱1茶匙,黑酱油 ½ 茶匙, 酱油1茶匙,红糖 ½ 茶匙,水100毫升。

{做法}

1. 起油锅爆香蒜葱姜和辣椒碎,加入香菇丝和肉碎炒至肉色变才加入腐皮与金针菇拌炒一下。

2. 接着,加入粉丝与调味料炒煮均匀至剩下些许汤汁即可关火, 让粉丝吸净锅中汤汁即可装盘趁热享用。

Fresh Beancurd Sheet Glass Noodles

{Ingredients} Glass noodle (soak in water for at least 4 hours), fresh beancurd sheet (soaked till tender and set aside), mushroom x2 (soaked and shredded), ground chicken (marinate with some soy sauce and pepper for 5 mins), enoki mushroom (washed), chopped garlic, shallot, ginger and red chili.

{Seasonings} Bean paste x 1 tsp, dark soy sauce x ½ tsp, soy sauce x 1 tsp, sugar x ½ tsp, water x 100ml.

{Method}

1. Heat up oil to sauté chopped garlic, shallot, ginger and red chili till fragrant, add in mushroom and ground chicken to stir-fry till aromatic only add in fresh beancurd and enoki mushroom to continue stir-frying.

2. Follow by add in glass noodle and seasonings to cook till well mixed and serve hot.
