葱油拌面
{材料} 蒸熟蛋面一包(用沸水川烫2分钟过冷水备用), 青葱一棵(洗净切丁),荷包蛋,鸡柳(用酱油和胡椒粉腌5分钟),蒜碎,小红葱碎 ,红辣椒碎。
{调味料} 黑酱油 ½ 茶匙,蚝油1茶匙, 酱油1 ½ 汤匙, 糖1茶匙, 水3汤匙, 醋,麻油和胡椒粉少许,全部混合拌均,用微波炉30秒叮热备用 。
{做法}
1. 起油锅爆香一点蒜和红辣椒碎后,加入鸡柳拌炒至熟备用。
2. 另起3大匙的油锅爆香蒜葱和青葱丁至金黄色备用。
3. 然后,把川烫的面条,调味料和葱油拌均后,装盘加入鸡柳和荷包蛋当配料即可享用。
Scallion Noodles
{Ingredients} Egg noodles x 1 pack (cook the noodle for 1 mins in boiling water, rinse through cold water, drain well and set aside), green onion x 1 stalk (wash and diced), overhard egg, chicken slices (marinate with some soy sauce and pepper for 5 mins), chopped garlic, shallot and red chili.
{Seasonings} Black soy sauce x ½ tsp, oyster sauce x 1 tsp, soy sauce x 1 ½ tbsp., sugar x 1 tsp, water x 3 tbsp, some vinegar, sesame oil and pepper, mix all well in a bowl and heat in microwave for 30 seconds, set aside.
{Method}
1. Heat up oil to sauté some chopped garlic and chili, add in sliced chicken to stir-fry till cooked, dish up and set aside.
2. Heat up another 3 tbsp of oil to sauté chopped garlic, shallot, red chili and diced green onions till slightly dark golden yellow color, remove and set aside.
3. Then, put in cooked noodles, seasonings and scallion’s oil in a bowl and mix well, arrange well-mixed noodles with some sliced chicken and overhard egg on a serving plate.
