香茅柠檬蒸鱼片 Lemon Grass Steamed Fish Fillet |
蒸鱼片的过程 |
{材料} 鱼片(洗净,用一点盐与胡椒粉腌10分钟),香茅(切大块状), 柠檬1颗(一半切片,一半榨汁),青葱(切段状),姜(去皮切片),红辣椒(切丝),蒜碎.
{调味料} 鱼露1汤匙,蒸鱼酱油1汤匙, 糖1汤匙,绍兴酒1汤匙,一半的柠檬汁(大约3-4汤匙),混合均匀备用。
{做法}
1. 把鱼片放在蒸盘上,把香茅,青葱与姜片摆在上面,入锅以大火蒸10分钟。
2. 然后,把香茅,葱和姜片拿掉,汤汁也倒掉。
3. 淋上调味料,加入蒜与红辣椒后盖上一层保鲜膜再蒸上3-5分钟后,摆上柠檬片焖2分钟即可趁热享用。

{Ingredients} Fish fillet (wash and marinate with some salt and pepper for 10 mins), lemongrass (sectioned), lemon x 1 (half sliced, half squeezed for juice), green onion (sectioned), ginger (skin off and sliced), red chili (shredded), chopped garlic.
{Seasonings} Fish sauce x 1 tbsp, steam fish soy sauce x 1 tbsp, sugar x 1 tbsp, Shaoxing wine x 1 tbsp, lemon juices x 3-4 tbsp, mix all well in a bowl.
{Method}
1. Put fish fillets on the steam plate, add in lemongrass, green onion and ginger on top, steam under high heat for 10 mins.
2. Then, remove the lemongrass, green onion and ginger as well as the water.
3. Pour in the seasonings, follow by add in chopped garlic and red chili to continue steam for another 3-5 mins only put on the lemon slices and keep warm for 2 mins inside the steamer, serve hot.
