家常炒米粉

{材料} 米粉1包, 香菇2朵 (浸软, 切片), 鸡蛋2粒 (加点盐, 胡椒粉和麻油打散), 肉碎 (用少许盐, 米酒, 酱油与糖腌10分钟), 蒜碎, 洋葱碎, 香肠丝, 胡萝卜丝与菜丝适量.

{调味料} 黑酱油1大匙, 酱油3大匙, 蚝油1大匙, 鸡粉 ½ 小匙, 鱼露 1小匙, 盐, 胡椒粉和水适量.

{做法}

1. 米粉用凉水泡大约2分钟或至软, 沥干备用.

2. 热1大匙油将蛋炒碎备用.

3. 再次热3大匙油, 放入蒜碎和洋葱碎炒香后, 放进香菇片, 肉碎和香肠丝拌炒至肉变色才加入胡萝卜丝与菜丝.

4. 调入调味料, 加水至盖过所有材料, 关上锅盖焖5分钟.

5. 然后, 加入米粉, 用筷子翻炒均匀后加入鸡蛋碎再翻炒一下即可.

Home-style Fried Vermicelli

{Ingredients} Rice vermicelli x 1 pack, mushroom x 2 (soaked till tender, shredded), eggs x 2 ( beaten with some salt, pepper and sesame oil), minced pork/chicken (marinate with some salt, rice wine, soy sauce and sugar for 10 mins), chopped garlic, chopped onions, shredded sausages, shredded carrots and shredded veggies in right amount.

{Seasonings} Black soy sauce x 1 tbsp, soy sauce x 3 tbsp, oyster sauce x 1 tbsp, chicken powder x ½ tsp, fish sauce x 1 tsp, some salt, pepper and water.

{Method}

1. Soaked with cold water for 2 mins or till soften, drain well and set asides.

2. Heat up 1 tbsp oil; pour in the egg mixture to spread it evenly to form a thin omelette, brown on one side, flip over and break the omelette into small bite size. Remove and set aside.

3. Heat again 3 tbsp oil, add in chopped garlic and onions to stir-fry until fragrant, add in mushroom, minced pork and shredded sausages to mix well until meat changed color only add in shredded carrots and veggies.

4. Season with seasonings and add in water to cover all the ingredients, cover with lid simmer for 5 mins.

5. Then, add in rice vermicelli, use chopsticks to stir evenly and add in eggs to mix well. Serve hot.
