特色鱼片 Fish slices with special sauce

特色鱼片
无论是淡水鱼还是咸水鱼, 它们的身上都携带着某些寄生虫, 因此当男女人们大量食用没有进行适当消毒的生鱼片后, 身体内是很容易被鱼类寄生虫感染的. 可以的话, 多花费一些时间, 对鱼片下些”苦”功吧, 吃的安心比较划算呀!

特色鱼片

{材料} 鱼片300克, 洋葱半粒(切丁), 栗粉半杯, 青葱1支(切丁)

{腌料} 盐1/2茶匙, 糖 1/2茶匙, 胡椒粉1/2茶匙, 蛋白2汤匙, 麻油1/2茶匙

{调味料} 沙茶酱1汤匙, 糖 1茶匙, 水1/2 杯, 番茄酱2汤匙, 麻油1/2茶匙, 蚝油1茶匙, 绍兴酒2茶匙, 酱油1汤匙, 栗粉1茶匙

{做法}

1. 把鱼片切成条状, 用腌料泡30分钟, 再沾上栗粉. 用热油锅煎至两面都成浅褐色, 备用.

2. 锅内留给下2汤匙的油, 下洋葱丁拌炒一下, 加入调味料拌均, 煮至沸腾.

3. 然后, 加入青葱丁, 继续煮多一分钟即可, 把它倒上煎好的鱼条便可享用了.

Fish slices with special sauce

{Ingredients} Fish fillet x 300g, onion x ½ (diced), corn flour x ½ cup, spring onion x 1 (diced)

{Marinades} Salt x ½ tsp, sugar x ½ tsp, pepper x ½ tsp, egg white x 2 tbsp, sesame oil x ½ tsp

{Seasonings} Sha-Cha sauce x 1 tbsp, sugar x 1 tsp, water x ½ cup, tomato sauce x 2 tbsp, sesame oil x ½ tsp, oyster sauce x 1 tsp, Shaoxing wine x 2 tsp, light soya sauce x 1 tbsp, corn flour x 1 tsp.

{Method}

1. Cut the fish fillet into strips, marinate for 30 minutes, coat fish slices with corn flour. Shallow-fry both sides till lightly brown color, set aside.

2. Leave 2 tbsp of oil in wok to stir-fry the onion dices, add in seasonings to mix-well and cook until boils.

3. Then, add the spring onion dices, continue cook for 1 min and pour the cooked sauce on the pre-fried fish strips.
