豆瓣酱炒塘虱鱼片
{材料} 塘虱/鲶鱼鱼片200克,蒜碎, 姜碎, 青葱粒和芫荽叶适量
{腌料} 酱油一茶匙, 酸梅酱半茶匙,绍兴酒半茶匙,糖, 盐, 胡椒粉和栗粉少许
{调味料} 豆瓣酱 1茶匙, 水适量
{做法}
1. 鱼片用腌料腌上至少半小时。
2. 热油锅爆香蒜姜葱, 然后加入豆瓣酱炒香后加入鱼片和清水, 用中火轻轻的拌炒至熟后,撒上芫荽叶拌均即可。
Bean Paste Catfish Fillet
{Ingredients} Catfish fillet x 200g, chopped garlic, chopped ginger, diced green onion and some cilantro
{Marinades Sauce} Soy sauce x 1 tsp, plum sauce x ½ tsp, Shaxing wine x ½ tsp, some sugar, salt, pepper and corn starch.
{Seasonings} Bean paste x 1 tsp, some water
{Method}
1. Marinated the fish fillets with marinades sauce.
2. Heat up oil to sauté chopped garlic, ginger and green onion, add in bean paste to stir-fry until fragrant, add in fish fillet and water, slowly stirring under medium heat till cooked, sprinkle with some cilantro and mix well. Serve hot.
