糯米鸡
{材料A} 糯米一杯(用水浸过夜), 黑酱油1/2 茶匙, 酱油1茶匙, 麻油1/2 茶匙, 蚝油1汤匙, 糖1/2茶匙, 五香粉和胡椒粉少许
{材料B} 鸡肉片适量, 香菇两朵(浸软,切半), 姜碎1/2茶匙, 蚝油1/2汤匙,酱油 1/2茶匙, 黑酱油1/2茶匙, 糖1/2汤匙, 麻油1茶匙, 绍兴酒1/2茶匙
{材料C}小红葱3粒(切碎), 蒜2瓣(切碎), 蚝油1/2汤匙,糖1/2汤匙,麻油1/2茶匙, 胡椒粉少许, 水200ml
{材料D} 水煮鸡蛋1粒(切成大片状), 腊肠几片
{做法}
1. 材料B全部拌均后腌过夜。
2. 糯米隔天沥干备用。
3. 烧热2汤匙油爆香葱蒜碎, 加入材料C的酱汁里。
4. 用这油锅加入沥干的糯米翻炒一下, 调入材料A炒至均匀。
5. 在每个小碗里放几片鸡肉, 香菇, 腊肠, 鸡蛋, 然后平均的铺上炒好的糯米用汤匙压平。
6. 把材料C的酱汁倒入每个小碗中, 刚好盖过糯米即可, 以大火蒸上40-45分钟。
Lo Mai Kai
{Ingredients A} Glutinous rice x 1 cup (soaked for overnight), black soy sauce x ½ tsp, soy sauce x 1 tsp, sesame oil x ½ tsp, oyster sauce x 1 tbsp, sugar x ½ tsp, some five spice powder and pepper
{Ingredients B} Chicken thigh(sliced), mushroom x 2 (soaked, cut into half), chopped ginger x ½ tsp, oyster sauce x ½ tbsp, soy sauce x ½ tsp, black soy sauce x ½ tsp, sugar x ½ tbsp, sesame oil x 1tsp, Shaoxing wine x ½ tsp
{Ingredients C} Shallots x 3 (chopped), garlic cloves x 2 (chopped), oyster sauce x ½ tbsp., sugar x ½ tbsp., sesame oil x ½ tsp, some pepper, water x 200ml
{Ingredients D} hard boiled egg x 1 (cut into sectioned), preserved chicken sausage few sliced.
{Method}
1. Marinates all ingredients B for overnight.
2. Drain the glutinous rice dry and set aside.
3. Heat up 2 tbsp oil to sauté chopped shallots and garlic till fragrant, add in to a bowl that fill sauce made with other ingredients C.
4. Then, use back the oil to continue stir-fry glutinous rice, add in balance ingredients A to strir-fry till mix well.
5. Put in some chicken slices, mushroom, egg and preserved chicken sausage slices in bottom of each small bowl, then add in glutinous rice on the top.
6. Pour in sauce from ingredients C equally to each small bowl, steam under high heat for 40-45 mins.
