咖哩蛋包 Curry Egg Omelette

咖哩蛋包

咖哩蛋包

{材料} 鸡蛋 x 5粒, 栗粉x1 tsp, 鸡肉 (切丁) x 300g, 蕃薯 (去皮切丁, 喜爱吃软一点的; 可以先蒸3-5分钟备用) x 200g, 洋葱(切丁) x 1 粒

{调味料} 小葱 (剁碎) x 3粒, 蒜米(剁碎) x 2 瓣, 咖哩粉 x 3 汤匙, 咖哩叶少许, ½ 碗水

{做法}

1. 热油锅, 将全部调味料倒进锅爆香后, 加入洋葱丁, 蕃薯丁和鸡肉丁炒香. 再把1/2 碗水倒入, 煮至水干后, 取出备用.

2. 鸡蛋加入栗粉打散. 平底锅中烧热植物油适量, 倒入蛋液后转动锅把鸡蛋液流动至平均成蛋皮. 取出备用.

3. 将蛋皮铺在平盘上, 加入适量做法 1的馅料, 把它包上即可.

Curry Egg Omelette

{Ingredients} Eggs x 5, corn flour x 1tsp, chicken meat (diced) x 300g, potatoes (skinless and diced, if prefer soft; can steam it 3-5 min after diced) x 200g, onion (diced) x 1

{Seasonings} shallots (chopped) x 3, garlic clove (chopped) x 2, curry powder x 3 tbsp, some curry leaf, ½ bowl water.

{Method}

1. Heat up oil, put in all seasonings to stir-fry till fragrant, add in diced onion, potato, and chicken meat to stir-fry a while. Then, pour in ½ bowl of water; bring it to cook till water is fully absorbed. Remove and set aside.

2. Eggs add in corn flour to beat up. Heat up a pan with proper amount of oil, pour in egg mixtures, shake well to let egg mixtures spread evenly to become an egg sheet. Then set aside.

3. Put egg sheet on top of a plate, fill with proper amount of method 1 filling, roll up and serve it.
