菠菜番茄鱼丸蛋炒饭

{材料} 番茄1粒(川烫热水去皮,切块状),菠菜(在加了点盐与油的热水中川烫一下,过冷水备用),隔夜米饭,鱼丸鱼饼(切片),萝卜丝,鸡蛋3粒(加点眼,麻油和胡椒粉打散备用),蒜碎

{调味料} 盐1茶匙,鸡粉 ½ 茶匙,糖,番茄酱与胡椒粉少许

{做法}

1. 起油锅,把番茄块炒出红油备用。

2. 另烧热3大汤匙油锅将蒜碎爆香,加入鱼丸鱼饼片和萝卜丝以大火快炒至均匀后推去锅边。

3. 加入一半的蛋液, 炒至半熟后加入白饭翻炒一下。

4. 将其余的蛋液与调味料加入, 把刚才推去一边的材料加入继续拌炒至松散均匀后, 加入番茄块与菠菜翻炒一下即可。

Eggs Fried Rice with Spinach, Tomatoes and Fish Ball

{Ingredients} Tomato x 1 (washed, blanch over boiling water to remove the skin and diced), spinach (blanch over boiling water that add with some salt and oil, follow by rinse through cold water),overnight cooked rice, fish ball and fish cake (sliced), shredded carrot, egg x 3 (beaten with some salt, pepper and sesame oil), chopped garlic.

{Seasonings} Salt x 1 tsp, chicken powder x ½ tsp, some sugar, tomatoes sauce and pepper.

{Method}

1. Heat up some oil to stir-fry the diced tomatoes a while and set aside.

2. Heat up 3 tbsp of oil in wok to sauté chopped garlic till fragrant, add in sliced fish ball, fish cake, and shredded carrot to stir fry over high heat till well mixed and push aside.

3. Add in half of eggs mixture, stir-frying until half cooked and add in rice to continue slightly stir fry.

4. Add in the rest of egg mixture and seasonings as well as other ingredients that just push aside to stir-fry until aromatic, follow by add in tomatoes and spinach to mix well and serve hot.
