蛋炒四季豆肉丝 Egg Fried French Bean Pork Slices
材料

蛋炒四季豆肉片

{材料} 四季豆(切片),肉片(用一点酱油和胡椒粉腌上10分钟),鸡蛋2粒(加点盐,麻油和胡椒粉打散备用!),红辣椒碎,蒜碎,小红葱碎。

{调味料} 酱油1茶匙,蚝油 ½ 茶匙, 糖 ½ 茶匙,米酒 ½ 茶匙,水2大匙,胡椒粉和太白粉适量, 拌成综合酱料备用。

{做法}

1. 起油锅,把四季豆过一过油翻炒一会儿后捞起沥油备用。

2. 然后加点油烧热,把蛋略炒熟后盛起备用。

3. 再热2大匙油锅爆香蒜葱与辣椒碎,放入腌好的肉片炒至变色后,调入调味料,续而加入四季豆和蛋拌炒至均匀入味即可。

Egg Fried French Bean Pork Slices

{Ingredients} French Bean (Sliced), pork slices (marinate with some soy sauce and pepper for 10 mins), eggs x 2 (beaten with some salt, sesame oil and pepper), chopped red chile, shallot and garlic.

{Seasonings} Soy sauce x 1 tsp, oyster sauce x ½ tsp, sugar x ½ tsp, rice wine x ½ tsp, water x 1 tbsp, some pepper and corn starch, mix all well in a bowl and set aside.

{Method}

1. Heat up oil, frying the French bean a while and drain well.

2. Add in some oil, follow by slightly cook the eggs mixture, remove and set aside.

3. Heat up 2 tbsp of oil again, sauté chopped garlic, shallot and chili till fragrant, add in pork slices to cook till change color, follow by add in seasonings, French bean and eggs to stir-fry till aromatic and thick. Dish up.
