公爵夫人土豆 Duchess Potatoes
很优雅的名称, 这类土豆的"新"吃法据说是从一位想象力超丰富多彩的某位法国公爵夫人所创始的. 简单又带点高贵的甜品点心, 趁凉了一些但还带有点微热时吃最可口!

公爵夫人土豆

{材料} 土豆/马铃薯(去皮, 切成块状) 3 个, 牛油5大匙或是70克, 蛋黄2个, 牛奶50ml

{调味料} 盐与黑胡椒适量.

{做法}

1. 土豆块放入盘中以高火蒸5分钟, 翻面继续蒸5分钟至软烂后, 压成泥备用.

2. 牛油放入微波炉以1分钟将它融化, 把2/3倒入土豆泥中(剩下的最后拿来刷表面); 加入蛋黄搅拌均匀后, 再加牛奶, 盐与黑胡椒拌均, 然后把拌好的土豆泥装入挤花袋中.

3. 用大菊花嘴, 挤在铺好油纸的烤盘上; 扫上剩下的牛油在表面,预热烤箱200◦C/400◦F后, 放入挤好的土豆泥在烤箱中层烤20分钟或是微金黄色即可.

Duchess Potatoes

{Ingredients} Potatoes x 3(peeled, cut into 1 1/2-inch chunks shape), unsalted butter x 5 tbsp or 70g, egg yolks x 2, milk x 50ml.

{Seasonings} Some salt and black pepper.

{Method}

1. Steam potatoes under high heat for 5 mins each sides until tender, mash it and set asides.

2. Melt unsalted butter through microwave for 1 minute, then pour 2/3 into the mashed potatoes (balance will use for brush surface later); add in egg yolks and mix it by hand mixer, then add in milk, salt and black pepper to mix it well again, transfer the potatoes mixtures into a piping bag.

3. Use pipe decorative with large star point, squeeze on the baking pan with parchment, brush up the rest of the butter on the surface, bake in the preheated oven 200 ◦ C/400 ◦ F for about 20 minutes or until lightly browned.
