芦笋炒鸡肉片

{材料} 芦笋, 鸡肉片/肉碎, 蒜,姜,小红葱碎

{调味料} 蚝油1汤匙, 鱼露1/2 茶匙, 盐与黑胡椒粉少许, 栗粉水1汤匙

{做法}

1. 鸡肉用少许酱油和胡椒粉腌上10分钟。

2. 芦笋去掉老皮切斜段, 用沸水川烫1分钟捞起过冷水,沥干备用。

3. 起油锅爆香蒜姜葱碎, 将腌好的鸡肉用中火翻炒至变色后, 放入芦笋及调入调味料, 最后以栗粉水勾芡即成。

{Ingredients} Asparagus, chicken slices/ ground chicken, some chopped garlic, ginger and shallot.

{Seasonings} Oyster sauce x 1 tbsp, fish sauce x ½ tsp, some salt and black pepper, corn flour solution x 1 tbsp

{Method}

1. Marinate chicken slice with some soy sauce and pepper for at least 10 mins.

2. Ends trimmed and sectioned the asparagus, blanch over the boiling water for 1 mins, refresh under cold water, drain and ready for use.

3. Heat up oil, sauté chopped garlic, ginger and shallots, then add in chicken slices to stir-fry till cooked through, add in asparagus and seasonings to continue stir-fry, lastly thicken up with corn flour solution and dish up.
