豉油皇炒面 Soy Sauce Chow Mein

豉油皇炒面
撒上葱油酥的豉油皇炒面
港式豉油皇炒面其实就是酱油炒面, 我喜欢它的简单, 简单却不失美味...食谱参考简易食谱

豉油皇炒面

{材料} 蒸熟蛋面, 鸡蛋2粒(加少许盐,胡椒粉与麻油打散), 蒜碎, 小红葱碎,姜碎, 青葱丁, 白芝麻适量

{调味料} 酱油2-3 汤匙, 黑酱油1½茶匙, 蚝油2茶匙, 红糖1茶匙, 水3-5大匙,麻油少许, 全部调味料拌均匀备用。

{做法}

1. 把面放入沸水里煮大约30秒即可, 沥干过冷河备用。

2. 烧热3-5大匙的油锅, 爆香蒜葱姜碎后, 放入面与调味料以中火快炒至色泽均匀。

3. 把面条拨到一边, 加入蛋液转大火快炒至半熟时, 把蛋和面条一起拌炒。

4. 加入青葱丁与白芝麻快炒一番即可。上碟时可以再加些油葱酥更香。

Soy Sauce Fried Noodles 

{Ingredients} Steamed chow mein, eggs x 2 (beaten with some salt, pepper and sesame oil), chopped garlic, chopped shallots, chopped ginger, and diced green onions and some white sesame seed.

{Seasonings} Soy sauce x 2-3 tbsp, black soy sauce x 1 ½ tsp, oyster sauce x 2 tsp, pure cane sugar x 1 tsp, water x 3-5 tbsp, some sesame oil, mix all together as mixture.

{Method}

1. Submerge steamed chow mein in boiling water for 30 seconds, rinse with the cold water and drain well.

2. Heat up 3-5 tbsp oil in frying pan to sauté chopped garlic, shallots and ginger till fragrant, add in chow mein and seasonings mixture to stir-fry over medium heat until chow mein is mix well with the mixture.

3. Add in egg mixture and turn to high heat to fry till half cooked, continue to stir-fry to mix the chow mein with eggs well.

4. Add diced green onions and sesame seeds and mix well. Transfer to serving plate and sprinkle with some fried onion will be tastier.
