火腿酱油炒饭 Ham Soy Sauce Fried Rice


材料与预备过程

又一次的火腿酱油炒饭
火腿酱油炒饭

{材料} 隔夜白饭, 红甜椒丁, 红辣椒碎少许,火腿丁, 蒜碎1大匙,萝卜丝,青葱丁2大匙,鸡蛋1粒(煎成荷包蛋备用), 猪油1大匙(没有可以用植物油代替)

{调味料}酱油1汤匙, 黑酱油1汤匙, 蚝油1茶匙,糖与胡椒粉少许放入小碗中拌均备用。

{做法}

1. 把调味料拌入隔夜米饭中, 拌至松散备用。

2. 锅中烧热1大汤匙油, 把萝卜丝,红甜椒丁,火腿丁和一大匙的青葱丁翻炒至熟后盛起备用。

3. 油锅中继续加2大匙油(一匙猪油,一匙栗米油)烧热, 将蒜与红椒碎爆香后, 加入隔夜米饭以大火快炒至大约2-3分钟。

4. 然后,加入之前炒熟的材料和另一匙的青葱丁翻炒均匀。

5. 把荷包蛋放上炒饭即可享用。

Ham Soy Sauce Fried Rice

{Ingredients} Overnight cooked rice, red bell pepper (diced), chopped red chili, ham(diced), chopped garlic, shredded carrots, diced green onions x 2 tbsp, egg x 1 (fry as sunny side up or over hard), lard x 1 tbsp (If don’t have, replace with corn oil or normal cooking oil)

{Seasonings} Soy sauce x 1 tbsp, black soy sauce x 1 tbsp, oyster sauce x 1 tsp, some sugar and pepper; add all in a small bowl and mix well.

{Method}

1. Mix the seasonings with overnight cooked rice, stir till well combine and set aside.

2. Heat up 1 tbsp oil in wok; add in shredded carrots, red bell pepper, ham and 1 tbsp of green onion to stir fry until cooked. Remove and set aside.

3. Heat up 2 tbsp oil (1 tbsp of lard and 1 tbsp of corn oil) to sauté chopped garlic and chili till fragrant, add in overnight cooked rice to stir fry over high heat till well-mixed for about 2-3 mins.

4. Then, add in method 2 cooked ingredients follow by another 1 tbsp of green onion to stir fry for a while for well mixed.

5. Transfer to serving plate and put the fried egg on top.
