冬炎米粉
{材料} 米粉(泡软), 蒜碎, 小红葱碎,火腿丁, 萝卜丝, 鸡蛋2粒(加点盐, 胡椒粉与麻油打散),小白菜几叶(用加了点盐与油的沸水川烫一至两分钟, 沥干备用)
{调味料} 冬炎酱3大匙, 酱油半茶匙,鱼露1茶匙, 糖,盐与胡椒粉少许, 水2-3大匙。
{做法}
1. 起油锅先把蛋炒熟备用。
2. 然后, 再用3大匙油爆香蒜葱碎, 加入火腿丁和萝卜丝拌炒一下后调入调味料。
3. 续而加入泡软的米粉以大火快炒2分钟, 再加入炒好的鸡蛋与小白菜翻炒均匀即可。
Tom Yum Rice Vermicelli
{Ingredients} Rice vermicelli (soak till tender), chopped garlic, chopped shallot, diced ham, shredded carrot, eggs x 2 (beaten with some salt, pepper and sesame oil), some chinese cabbage (Blanch over boiling water with some salt and oil for 1-2 mins, drain well and set aside.)
{Seasonings} Tom yum paste x 3 tbsp, soy sauce x ½ tsp, fish sauce x 1 tsp, some sugar, salt and pepper, water x 2-3 tbsp.
{Method}
1. Heat up oil in frying pan to stir-fry egg mixture till cooked, set aside.
2. Then, add in another 3 tbsp of oil to sauté chopped garlic and shallot till fragrant, add in diced ham and shredded carrot to stir-fry and follow by add in seasonings.
3. Add in rice vermicelli and stir-fry over high heat for 2 mins, continue with add in cooked egg and chinese cabbage to stir-fry till well mix.
