红豆桂花彩色汤圆 Mixed Color Glutinous Ball Prepare colors glutinous balls in advance, only need to prepare soup base when wish to eat. 彩色汤圆提前做好速冻保存,随吃随取…

西米红豆汤圆糖水 Red Bean Sago Soup Base 

{材料} 
西米50克 Sago 50g 
*煮西米的水500毫升* Water to cook sago 500ml 
红豆150克 Red bean 150g 
红糖适量 Some brown sugar 
老姜一小块 Old ginger 1 small pcs 
斑斓叶3片 Pandan leaves 3 pcs 
清水500毫升 Water 500ml 
桂花1汤匙 Osmanthus flower 1 tbsp 
彩色汤圆适量 Some frozen mixed color glutinous balls 

{做法Directions}

1. 500毫升的水煮沸后加入50克西米,再次煮沸后换小火一边搅拌一边煮大约10分钟左右或煮至只剩白色小点后,熄火盖好焖15分钟。Bring 500ml of water to boil only add in 50g of sago, once boil again switch to low heat to cook for 10mins or until only small white dot, off heat and simmer with covered for 15 mins. 

2. 煮西米红豆糖水时,高压锅中加入500毫升清水+老姜一小块+斑斓叶+红糖和红豆,按下煮汤键煮熟后再加入西米拌均匀保温待用即可。To cook soup base, add in 500ml of water + old ginger piece + pandan leave + brown sugar + red bean, press cook “soup” button to cook, once done cook only add on sago and keep warm. 

3. 桂花用热水浸泡5分钟左右,沥干备用。Use hot water to soak Osmanthus flower for 5 mins, drain well and set aside. 

4. 速冻彩色汤圆就另外用煮沸的清水煮至全部浮起来,过程中会加两次清水,煮熟后拿起泡冷水一分钟后沥干,放入西米红豆糖水水中+ 加上适量的桂花就可随时享用啦。Cook the frozen glutinous rice balls in clear boiling water until all float to the surface, add 2 times of some water and bring to boil again to ensure all well cooked and remove and soak into a bowl of cool boiled water for about 1 min. Drain thoroughly and drops the cooked glutinous rice balls in red bean sago dessert soup base and top with some osmanthus flower.

豆苗桂花粉丝 Osmanthus Eggs with Pea Sprouts

Stir-fry eggs, dried scallops with glass noodles and pea sprouts, modified version Chinese style scrambled eggs aka Osmanthus Eggs. 如何在家煮出简单美味,能吃又能看的佳肴…改良版的干贝桂花翅,加了豆苗的家庭味。 

干贝豆苗桂花粉丝 Osmanthus Eggs with Pea Sprouts 

{粉丝材料Glass Noodle Ingredients} 
粉丝30克 Glass noodles 30g 
鸡精汁½ 茶匙Concentrated chicken stock ½ tsp 
盐¼ 茶匙 Salt ¼ tsp 
蘑菇江鱼仔粉/左口鱼粉 ¼ 茶匙 Mushroom anchovies powder/Flounder fish powder ¼ tsp 
糖 ¼ 茶匙 Sugar ¼ tsp 
水 5汤匙 Water 5 tbsp 

{材料A Ingredients A} 
橄榄油 3 汤匙 Olive oil 3 tbsp 
蒜碎1½汤匙 Chopped garlic 1½ tbsp 
干贝 3 汤匙 Dried scallops 3 tbsp 
豆苗60克 Some pea sprouts 60g 

{鸡蛋材料 Egg Ingredients} 
鸡蛋4粒 Eggs 4 pcs 
玉米淀粉 1汤匙 Corn starch 1 tbsp 
水1汤匙 Water 1 tbsp 
盐少许Some salt to taste 
干贝1 汤匙Dried scallop meat 1 tbsp 
胡椒粉少许 Some pepper 
橄榄油5汤匙 Olive oil 5 tbsp 
花雕酒1-2汤匙 Huadiao wine 1-2 tbsp 

{做法Directions} 
1. 粉丝洗一洗备用,鸡蛋加入玉米淀粉水、盐、干贝碎丝、和胡椒粉搅拌至均匀有泡沫备用。Clean glass noodle in advance, add corn starch water, salt, pepper and dried scallops in egg mixture, beaten until smooth and slightly bubbles, set aside. 

2. 热锅把粉丝调味料倒入,加入粉丝,中小火煮至汤汁收干即可捞出待用。Heat up pan, pour in glass noodle’s seasonings, stir-fry until dry up. 

3. 起3汤匙橄榄油锅,加入蒜碎和干贝碎丝炒至金黄色捞出备用,接着加入豆苗炒一炒即可出锅待用。Heat up 3 tbsp of olive oil to sauté chopped garlic and dried scallops meat until golden brown, dish up and set aside, follow by add in pea sprouts to stir fry for a while and set aside too. 

4. 再起5汤匙橄榄油,中大火热锅后倒入拌均匀的鸡蛋液,一定要一边倒入一边拌炒才能呈现出桂花般的样子,全程中大火一直炒碎成你想要的样子。Heat up 5 tbsp of olive oil under medium high heat, add in egg mixture, keep stirring while pouring to ensure it will look like osmanthus flower. 

5. 然后,加入豆苗,粉丝和干贝蒜碎,调入花雕酒再次翻炒均匀即可。Then, add in cooked pea sprouts, glass noodles and garlic scallops, season in Huadiao wine and stirring until well combined.

香菇海参焖猪手Braised Pork Knuckle with Sea Cucumber

Let’s practice some festive dishes in advance. 气压锅简易年菜👉🏻泡好的猪婆参+猪手(前猪脚)+香菇+水煮蛋就是一道上得了桌面的节日佳肴…海参特别是这类级别的只在值得庆祝的日子或佳节间偶尔出现😄 

香菇海参焖猪手Braised Pork Fore Leg with Sea Cucumber and Mushroom 

{材料Ingredients} 
猪手一盒 1 box pork fore leg 
泡好海参1只 Sea cucumber 1 pcs 
香菇丝6朵 Shredded Shiitake mushrooms 6pcs 
蒜头两颗 Whole garlic 2pc 
姜块1块 Ginger piece 1 pcs 
水煮蛋适量 Some hard boiled eggs 

{调味料Seasonings} 
酱油2汤匙 Soy sauce 2 tbsp 
黑酱油1茶匙 Black soy sauce 1 tsp 
蚝油1汤匙 Oyster sauce 1 tbsp 
盐适量 Salt to taste 
芝麻油1茶匙 Sesame oil 1 tsp 
清水50毫升 Water 50ml 
***拌均匀 Mix well. 
清水200毫升Water 200ml 

 {做法Directions} 

1. 先把水煮鸡蛋煮熟剥壳备用。Cook hard boiled eggs in advance, peel away the shell and set aside. 

2. 猪手和猪婆参过清水冲洗干净, 切大块状。Clean pork fore leg pieces and sea cucumber through running water, cut sea cucumber into pieces. 

3. 蒜头洗净割几刀帮助出味,姜块去皮割几刀。Clean garlics and ginger piece, cut few lines in the body. 

4. 气压锅中依序放入猪手、蒜头、姜块、调味料、清水、香菇、水煮蛋和海参,放入气压过锅按下煮肉类键即可。Put in ingredients: pork fore leg, whole garlic, ginger piece, seasonings, water, mushrooms, hard boiled eggs and sea cucumber into pressure cooker, press down cook “meats” button. 

5. 煮熟后,如果说没有马上品尝,请先把海参捞出来,海参的口感就是要Q弹才美味哦。Dish up cooked sea cucumber if not taste immediately after done cooked, to avoid it turning too soft after staying in the pressure cooker for a longer time.

沙葛鱿鱼丝 Jiu Hu Char/Bang Kuang Char

Festive dish or CNY dish in our house. Stir-Fried Yam Bean with dry shredded cuttlefish. Yam bean is also known by many other names. Among them are Yam bean is also known by many other names. Among them are Bang Kuang (Hokkien), jicama (Spanish), bengkuang (Indonesia), sengkuang (Malay), sa kot (Cantonese), man pao (Laos), man kaeo (Thai), kesaur (India) and kuzu-imo (Japanese). An easy dish that perfect for any days. 福建人过年过节都想吃的家庭味。煮的过程特简单,只是准备过程需要点耐心…虽然要好吃不能偷懒,但还是会用刨丝神器,手工切丝太费事费力不讨好啦🫢🫣😬 

沙葛鱿鱼丝Jiu Hu Char/Bang Kuang Char 

{材料Ingredients} 
沙葛1个 Yam bean 1 pcs 
鱿鱼丝适量 Some dry shredded cuttlefish 
胡萝卜丝适量 Some shredded carrots 
香菇丝适量 Some shredded Shiitake mushrooms 
猪肉丝适量 Some shredded pork strips 
猪油30克 Pork lard 30g 
蒜碎5汤匙 Chopped garlic 5 tbsp 
小红葱碎 3汤匙 Chopped shallots 3 tbsp 
姜碎1茶匙 Chopped ginger 1 tsp 

{调味料Seasonings} 
酱油5汤匙 Soy sauce 5 tbsp 
黑酱油2汤匙 Black soy sauce 2 tbsp 
蚝油2汤匙 Oyster sauce 2 tbsp 
盐1 1/2 茶匙 Salt to taste 1 1/2 tsp 
胡椒粉适量 Some pepper 

{做法Directions} 
1. 用猪油爆香蒜葱姜碎,加入香菇丝炒香后,加入肉丝翻炒一下。Melting pork lard to sauté chopped garlic, ginger and shallots, follow by add in shredded shiitake mushroom, then add in pork strips to continue stir frying. 
2. 加入鱿鱼丝,胡萝卜丝和沙葛丝翻炒片刻, 调入调味料,以中小火慢慢地炒至水分收干即可。Add in shredded dry cuttlefish, carrots and yam bean, follow by seasonings, stir frying under medium low heat until thickened.

紫薯卷饼 Purple Sweet Potato Wrap

紫薯卷饼Purple Sweet Potato Wrap 

{材料Ingredients} 

紫薯泥100克 Purple sweet potato paste 100g 

卷饼 2片Mini wraps 2pcs 

鸡蛋2枚 Eggs 2 pcs 

车打芝士1片 Cheddar cheese 1 pcs 

 小黄瓜适量 Some mini cucumbers 

 蒸玉米粒适量 Some steamed corn 

 {做法Directions} 

1. 鸡蛋打散后(可以随意加调料,不加是想吃原汁原味)双面煎熟,切半待用。Beaten egg, fry until both sides turn golden yellow color, cut into half and set aside. 

2. 卷饼双面弄热,各约一分钟。Heat up wrap, both sides for about 1 min. 

3. 把紫薯泥抹在卷饼上,加上半片煎熟鸡蛋和芝士,对半折好即可。Spreading purple sweet potato paste on wrap, add on egg and cheese slice, folding into half and ready to serve with steamed corn + mini cucumbers.

紫薯一锅熟饭 Purple Sweet Potato One Pot Rice

 Purple sweet potato+yellow sweet potato+potato one pot rice really super quick but still delicious and nutritious, can add some extra veggies or anything else or just purely potatoes will do. 紫薯+黄番薯+马铃薯用电饭锅焖熟,材料简单的快手餐但不失美味营养哦。纯紫薯的口感会比较自然,加了黄薯和马铃薯就丰富更丰富一些。三薯一锅熟饭的配料可以很随意,或者绝对可以什么都不加。 


紫薯一锅熟饭Purple Sweet Potatoes One Pot Rice 

{材料Ingredients} 
紫薯1个 Purple sweet potato 1 pcs 
黄薯1个 Yellow sweet potato 1 pcs 
马铃薯2个 Potatoes 2 pcs 
白米2杯 White rice 2 cups 
胡萝卜块适量Some carrots pieces 
甜椒块适量Some bell peppers pieces 
蒜碎适量Some chopped garlic 
姜碎适量 Some chopped ginger 
小红葱碎适量Some chopped shallots 
蝶豆花水+清水550毫升 Blue pea water+water 550ml 
无盐黄油30克 Unsalted butter 30g 
西兰花适量 Some boiled broccoli 
水煮鸡蛋适量 Some hard boiled eggs 

{调味料Seasonings} 
豆瓣酱1茶匙 Bean paste 1 tsp 
酱油1汤匙 Soy sauce 1 tbsp 
甜酱油3汤匙 Sweet soy sauce 3 tbsp 
鸡精1/2汤匙 Chicken stock 1/2 tbsp 
胡椒粉适量 Some pepper 
***拌均匀 (除了豆瓣酱 )Mix well(Except bean paste) 

{做法} 
1. 马铃薯、紫薯和黄薯洗净去皮切小块状,再用清水去掉淀粉质,沥干备用。Wash and peel off the skin of potatoes, purple + yellow sweet potatoes, cut into small pieces, then rinsed with running water , until the water begins to run clear, drain and set aside. 
2. 白米洗三遍后,加入蝶豆花水+清水550毫升。Stir and rinse white rice 3 times, then drain; add in blue pea water+water 550ml. 
3. 起无盐黄油锅爆香蒜姜葱碎,接着加入豆瓣酱炒香后,加入马铃薯、黄薯,紫薯和胡萝卜块翻炒片刻,加入调味料、白米和蝶豆花水+清水550毫升,翻炒均匀加入甜椒块再次拌均。Heat up unsalted butter to sauté chopped garlic, ginger, and shallots till fragrant, add in bean paste to stir fry a while, add in potatoes, yellow+purple sweet potatoes and carrots to continue frying, follow by add in seasonings, white rice and 550ml of blue pea water + water, lastly add in bell pepper to mix well. 
4. 全部倒入电饭锅内,按下煮饭键煮熟即可。Transfer everything into a rice cooker, cook as you would regular rice. 
5. 西兰花先用加了盐和橄榄油的沸水川烫1分钟左右,捞起沥干过冷水备用。鸡蛋用蒸锅蒸13分钟后过冷水剥掉外壳切片备用。Blanch over broccoli with boiling water that add with some salt and olive oil for 1 min, drain well, soak in cold water a while, drain well again, and set aside. Hard boiled eggs sliced or cut into half as side dish.

紫薯木糠杯 Purple Sweet Potato Serradura

Simple No Bake Dessert: Purple Sweet Potato Serradura | 简单又好吃👉🏻紫薯木糠杯 Serradura also known as sawdust pudding or Macau pudding, is a well-known Portuguese dessert, popular in both Portugal and Macau, with a layered appearance alternating between whipping cream and crumbled Marie biscuits. You can alter the recipe by using different types of biscuits.  制作过程超简单,不用烤箱的甜品:紫薯木糠杯, 绝对好看又好吃耶💜💕 


紫薯木糠杯 Purple Sweet Potato Serradura 

{材料Ingredients} 
紫薯泥300克 Purple sweet potato paste 300g 
消化饼 200-250克 Digestive biscuit 200-250g 
鲜奶油400毫升 whipping cream 400ml 
香草精几滴 Vanilla extract few drops 
甜炼奶2汤匙 Sweet condensed milk 2 tbsp 

{做法Directions} 
1. 紫薯洗净表皮,去皮切成小块状,用清水清洗,洗几次,上蒸锅蒸25分钟左右。Clean purple sweet potatoes, peel off skin and cut into small pieces, rinse well with water for few times, steam for 25 mins or until soft. 

2. 蒸好加入蒸紫薯水/清水搅拌成泥状即可。Pour in steamed purple sweet potato water / clean water blend until smooth puree will do. 

3. 消化饼用搅拌器搅成碎粉状,看似木糠一样咯。Blend the digestive biscuit into thin powder. 

4. 鲜奶油+香草精+炼奶中高速打发至出现明显的纹路后加入紫薯泥低速拌均匀即可。Whip whipping cream + vanilla extract + condensed milk under medium high speed until the texture become fluffy, add in purple sweet potato paste and mix well under low speed. 
5. 然后一层打发的紫薯鲜奶油,一层消化饼干碎,重复至8分满就可以了。Assemble the layers together, alternate layering the purple sweet potato whipped cream mixture and biscuit powder, repeat until 80%full of your deserts bowl. 

6. 盖好放入冰箱冷藏至少2小时以上再享用最美味。要吃时才铺上熟紫薯粉和满满的鸡肉丝。Cover and keep refrigerated for at least 2 hours or overnight. Dusting with purple sweet potato powder and chicken floss before serving. 

***打发鲜奶油的容器等预先放入冰箱冷藏至少30分钟。Chilled mixing bowl and whisk attachment 30mins in advance before use to whip up the cream.

紫薯芋泥馅Natural Purple Sweet Potato + Yam Paste

紫薯牛奶吐司Poolish Purple Sweet Potato Milk Bun 

{波兰种Poolish} 
 全麦面粉50克Whole meal flour 50g 
干酵母1克 Instant yeast 1g 
清水50毫升 Water 50ml 

{主面团材料Main Dough Ingredients} 
奶油粉30克 Whip cream powder mix 30g 
清水30毫升 Water 30ml 
*拌均后的奶油55克 Whip cream 55g 
高筋面粉 250克 Bread flour 250g 
紫薯芋泥馅100克 Purple sweet potato yam paste 100g 
紫薯水95克 Purple sweet potato water 95g 
幼糖20克 Castor sugar 20g 
盐3克 Salt 3 g 
无盐黄油20克 Unsalted butter 20g 
干酵母3克 Instant yeast 3g 

{做法Directions}

1. 波兰种提前准备好,全部材料拌均后,盖上盖子室温发酵至少3小时后才能用或者室温发酵1小时后移去冰箱冷藏隔夜大约15小时左右再用。Prepare the poolish starter in advance, cover and set aside to let it fermented for at least 3 hours or 1 hour room temperature and then move to refrigerated for 15 hours only use. 

2. 将全部材料放入面包机内(除了干酵母&黄油)混合均匀(大约5分钟左右),加入黄油揉至光滑面团和发酵至两倍大(大约50分钟左右)。Mix all ingredients in a bread machine(except instant yeast & butter) till well combined, add in butter and let it knead until a smooth dough forms and well fermented (about 50 mins). 

3. 将发酵好了的面团在撒了些面粉的桌面,分割成适合的面团,搓成圆球形状休面十分钟,擀平排气整形做成各种形状的面包。Transfer dough onto a floured surface, shaped round and divide dough into equal portions, shaping up to ball shape, let it rest for 10 mins only flatten and shape to any desired shape. 

4. 吐司模具抹上室温融化的无盐黄油,放入整好形的面包面团,盖好做二次发酵(约50分钟)。Glaze non-stick toast mold with with room temperature unsalted butter, put in shaped dough, cover and leave aside to prove till double in bulk (about 50mins). 

5. 预热烤箱170°C, 烤25分钟左右。Pre-heated oven 170°C, bake for 25mins.

Purple Sweet Potato Yam Butter Cookies that special designed only for you🤗只属于你【紫薯芋泥】牛油小饼干 

紫薯芋泥牛油饼干Purple Sweet Potato Yam Butter Cookies 

{材料Ingredients} 

木薯粉300克 Tapioca flour 300g 
玉米淀粉50克 Corn starch 50g 
普通面粉130克 All purpose flour 130g 
糖粉60克 Icing sugar 60g 
紫薯泥150克 Purple sweet paste 150g 
无盐牛油200克Unsalted butter 200g 

{做法Directions} 

1. 无盐牛油室温30分钟软化后,与糖粉低速打发至浅黄色,加入紫薯泥搅拌均匀即可。Blend room temperature unsalted butter + icing sugar until soften or light yellow color, add in purple sweet potato paste and mix well. 

2. 分两次筛入木薯粉+玉米淀粉+普通面粉翻拌均匀。Sifted in tapioca flour + corn starch + all purpose flour in batches and mix well after each addition. 

3. 揉成软面团,盖好休面10分钟。Knead into soft dough, cover and let it rest for 10 mins. 

4. 每小份约6-7克,搓成小球状,按成大小一致的圆形状后用叉子简单塑形,冷藏保存待烤。Divide soft dough into 6-7g each portions shaping into small ball, press down to make a circle shape, use fork for simple shaping up. Keep refrigerated while waiting to bake. 

5. 提前预热好烤箱上下火(不开风扇)170°C,烤15-18分钟左右即可。Pre-heated oven 170°C(without fan), bake for 15-18mins.

纯天然紫薯芋泥馅 Natural Purple Sweet Potato + Yam Paste

Purple sweet potatoes paste with yam for slightly light purple color. 加了芋泥的紫薯馅更好看,紫色虽然百看不腻但偶尔也要调一下色泽,浅一些的紫色也挺好的💜 

纯天然紫薯芋泥酱 Natural Purple Sweet Potato + Yam Paste 

{材料Ingredients} 
芋头1个 Yam 1 pcs 
紫薯1个 Purple sweet potato 1 pcs 
蒸紫薯水50毫升 Steamed purple sweet potato water 50ml 
*清水适量 Some water 

{做法Directions} 

1. 紫薯和芋头洗净表皮,去皮切成小块状,用清水清洗,洗几次,上蒸锅蒸25分钟左右。Clean purple sweet potatoes and yam, peel off skin and cut into small pieces, rinse well with water for few times, steam for 25 mins or until soft. 

2. 蒸好加入蒸紫薯水/清水搅拌成泥状即可。Pour in steamed purple sweet potato water / clean water blend until smooth puree will do.

木耳腐竹鸡肉 Braised Chicken with Black Fungus Beancurd Sticks

 吃多不会腻的云儿腐竹焖鸡,腐竹成了主菜的这道简易家常菜营养成分算高又好吃(全家超爱吃腐竹,放好多哟) 


云耳腐竹鸡肉 Braised Chicken with Cloud Ear Fungus Beancurd Sticks 

{材料Ingredients} 
2块去皮去骨鸡腿肉 Boneless skinless chicken thighs 2 pieces 
腐竹枝适量 Some beancurd sticks 
云耳适量Some cloud ear fungus 
葱白适量Some bottom part of green onions 
青葱丁适量Some diced green onions 
蒜碎½汤匙Chopped garlic ½ tbsp 
姜碎1茶匙Chopped ginger 1 tsp 
小红葱碎适量Some chopped shallots 


{调味料Seasonings} 
 酱油2汤匙Soy sauce 2 tbsp 
黑酱油1茶匙Black soy sauce 1 tsp 
蚝油1汤匙Oyster sauce 1 tbsp 
花雕酒1汤匙Cooking wine 1 tbsp 
胡椒粉适量Some pepper 
清水250毫升Water 250ml 
*玉米淀粉1汤匙+水1汤匙,拌成玉米淀粉水勾芡用的。(喜欢浓稠的就再加1-2汤匙淀粉和水) * Cornstarch 1 tbsp + water 1 tbsp, mix to become corn flour solution (Prefer thicken, add 1-2 more tbsp each) 

{做法Directions} 

1. 鸡腿肉用1茶匙黑酱油,½茶匙酱油和½茶匙玉米淀粉腌制,冷藏至少30分钟。Marinate chicken thighs with 1 tsp of black soy sauce,½ soy sauce and ½ corn starch, keep refrigerated for at least 30 mins. 

2. 云耳腐竹提前泡发好,腐竹切成小块状,葱白切丁, 调味料加一半的清水混合搅拌均匀待用。Soaked cloud ear fungus and beancurd sticks until tender, cut beancurd sticks into small pieces, dicing bottom part of green onion, mix seasonings well with half of the water and set aside. 

3. 起2汤匙油锅爆香蒜姜葱碎后,加入鸡腿肉,云耳,腐竹和调味料与另一半的清水拌炒均匀后关盖小火焖煮10分钟左右。Heat up 2 tbsp of oil to saute chopped garlic, shallots , bottom part of green onions and ginger till fragrant, add in chicken thighs, cloud ear fungus, beancurd sticks and seasonings + another half of water to stir-fry and simmer cook under low heat with cover for 10 mins. 

4. 再加入玉米淀粉水和青葱丁拌均,小火再煮1分钟就OK了。Add in 1-2 tbsp of corn flour solution and diced green onions to mix well, cook under low hear for another 1 min.

Mango flavors jelly desserts in many shapes👉🏻jelly egg yolk, jelly mooncake, jelly cake slice and jelly in hello kitty shapes. 芒果味的燕菜果冻造型甜品…月饼是孩子们催我做很久的甜点…通常一年只做一两次😬(说真的,做了几次但还没认真拍过紫薯口味燕菜果冻月饼的视频,明年了吧🫢) 

芒果泥材料Mango Puree Ingredient : 
芒果2颗/400克 Mango 2pcs/400g 
清水 200毫升 Water 200ml 

芒果味果冻蛋黄 Mango Flavor Jelly Egg Yolk 
芒果泥 300毫升Mango puree 300ml 
燕菜粉 1/2 茶匙 Agar powder 1/2 tsp 
即溶果冻粉 1茶匙 Instant jelly powder 1tsp 
幼糖 30克 Caster sugar 30g 

椰浆月饼内馅Coconut Milk Mooncake Filling (可做六粒6pcs) 
椰浆 50毫升 Coconut milk 50ml 
清水100毫升Water 100ml 
细砂糖30克 Caster sugar 30g 
燕菜粉1茶匙Agar powder 1tsp 
果冻粉1茶匙 Jelly powder 1tsp 

芒果月饼外层Mango Mooncake Skin (可做四粒 4pcs )+ 芒果椰浆蛋糕甜品 Mango Coconut Milk Jelly Cake Slice 
芒果泥500毫升Mango puree 500ml 
清水 450毫升 Water 450ml 
幼糖 90克 Caster sugar 90g 
燕菜粉 2½ 茶匙 Agar powder 2½ tsp 
即溶果冻粉 2茶匙 Instant jelly powder 2tsp 

燕菜果冻蛋糕层Cake Layers + little deco 
*小桂花球+透明底层Little Osmantus Flower’s ball + Transparent Base: 
桂花½汤匙 Osmantus flower ½ tbsp 
细砂糖 15克 Caster sugar 15g 
燕菜粉 ½ 茶匙 Agar powder ½ tsp 
即溶果冻粉 ½ 茶匙 Instant jelly powder ½ tsp

紫薯夹心三明治 Purple Sweet Potatoes Sandwiches

 

 
一人份的快手蛋煎紫薯芝士三明治🥪Quick meal for 1 person 

紫薯芝士三明治Purple Sweet Potatoes Cheese Sandwich 

{材料Ingredients} 

紫薯泥2汤匙 Purple sweet potato paste 2 tbsp 
面包2片 Bread 2 slices 
鸡蛋2粒 Egg 2 pieces 
车打芝士1片 Cheddar cheese 1 piece 
美乃滋适量 Some mayonnaise 
 盐和糖适量 Some salt and sugar 

{做法Directions} 

1. 鸡蛋加适量的盐和糖打散备用。挤出适量的美乃滋在面包上,再抹上紫薯泥,放上车打芝士后盖上另一片面包。In a clean bowl, beaten eggs with some salt and sugar, set aside. Squeeze some mayonnaise on top of bread, spreading the purple sweet potato paste evenly, put on a slice of cheddar cheese and then top with another slice of bread. 

2. 平底锅中火预热,放入适量的无盐牛油,面包双面蘸满鸡蛋液,双面煎至金黄色即可。Pre-heat pan over medium heat, add in some unsalted butter, fully dipping bread with egg mixture, fry until both sides turn to golden yellow color.

紫薯牛油杯子蛋糕 Purple Sweet Potato Butter Cupcakes

Purple sweet potatoes paste butter cupcakes. 全蛋打发的紫薯馅牛油杯子蛋糕,糖可以自行调整,因为此次的紫薯馅完全不甜,这次的杯子蛋糕有特意加多糖的份量哦。 

紫薯馅牛油杯子蛋糕Purple Sweet Potatoes Paste Butter Cupcake 

{材料Ingredients} 

无盐牛油245克 Unsalted butter 245g 
蛋糕粉200克 Violet cake flour 200g 
蔗糖160克 Cane sugar 160g 
紫薯泥160克 Purple sweet potato paste 160g 
鸡蛋5粒(A级)Eggs 5pcs (grade A) 
牛奶80毫升(2次放)Milk 80ml (add by 2 times) 
泡打粉½茶匙 Baking powder ½ tsp 


{做法Directions} 

1. 紫薯提前蒸熟做成紫薯泥备用, 把泡打粉加入蛋糕粉拌均待用。Purple sweet potato pieces steam for 25 mins or until soft, add baking powder to cake flour, set aside. 

2. 室温软化的无盐牛油加蔗糖搅拌至牛油蓬松颜色变浅时加入紫薯泥搅拌均匀后,鸡蛋一粒一粒地加入,每次搅拌均匀之后再加一粒直到加完为止。Whisk unsalted butter that melted in room temperature together with cane sugar until color slightly turn light, add in purple sweet potatoes paste and mix well again, follow by add in egg 1 pcs each, mix well each time only add in another egg until finished. 

3. 把蛋糕粉过筛后加入,用中低速1档搅打1分钟,高速3档搅打10分钟左右。Add in sifted cake flour, whisk at medium low speed 1 for 1 min, then at high speed 3 for about 10 mins. 

4. 颜色不够紫,再加紫薯泥和牛奶/紫薯粉½茶匙,转换成低速1档搅拌1分钟,把面糊倒入杯子蛋糕的模具中,再加适量的紫薯泥,再倒入适量的面糊,用筷子搅拌一下。Add more purple sweet potato paste or purple sweet potato powder ½ tsp to enhance the color, turn to low speed 1 to mix well for 1 min, pour the batter into cupcakes cup, ½ of the cup will do, then add in purple sweet potato paste, follow by another round of batter, mix well with chopsticks. 

5. 预热烤箱180°C, 烤18分钟左右即可(烤箱温度得自行拿捏)。Pre-heated oven 180°C, bake for 18mins (oven temperature adjust accordingly).

预拌粉紫薯杯子蛋糕Purple Sweet Potatoes Cupcake 【 Cake Mix Recipe】

 

 
之前拍过预拌粉紫薯杯子蛋糕,想说这次试试拍做紫薯馅双层蛋糕,但是一不小心翻车了😅,想分享丑丑的蛋糕是因为外形翻车的过程太无预警地惊喜到我啦…可惜没拍到孩子们怎么弄成这样但预拌粉做的蛋糕口感很好的。Layer cake not perfectly made but the texture and flavor was good☺️

预拌粉紫薯蛋糕Purple Sweet Potatoes Cake with Cake Mix 

{材料Ingredients} 

低糖海绵蛋糕预拌粉500克 Sponge cake low sugar premix 500g 
鸡蛋9粒(A级/总数500克)Eggs 9pcs (grade A/500g in total) 
清水/牛奶125毫升 Water/milk 125ml 
紫薯水3汤匙 Purple sweet potato water 3 tbsp 
紫薯泥3汤匙 Purple sweet potato paste 3 tbsp 
玉米油100毫升 Corn oil 100ml 

{做法Directions} 

1. 把预拌粉、鸡蛋、牛奶、紫薯水和紫薯泥用低速1档搅打1分钟,高速3档搅打10分钟左右。Whisk sponge cake mix, eggs, milk, purple sweet potatoes water and paste at speed 1 for 1 min, then at speed 3 for about 10 mins. 

2. 加入玉米油,转换成低速1档搅拌1分钟,把面糊倒入蛋糕的模具中。Add in corn oil and whisk at speed 1 for another 1 min, then pour batter into ungreased cake pan. 

3. 预热烤箱170°C,三层蛋糕烤25分钟;杯子蛋糕烤18分钟左右即可(烤箱温度得自行拿捏)。Pre-heated oven 170°C, 3 layers cake bake for 25 mins, cupcakes bake for 18mins (Oven temperature adjust accordingly).

紫薯水果燕菜果冻 Purple Sweet Potato Fruits Jelly 

 

Summer desserts: homemade purple sweet potato colorful refreshing fruits jelly. Perfect to make use of the seasonal fruits! 紫薯超适合做甜点, 夏天怎能少了燕菜果冻的甜品解解暑,继续将紫薯用到底做了个彩色紫薯水果燕菜果冻。 
 
紫薯水果燕菜果冻 Purple Sweet Potato Fruit Jelly  

{紫薯泥 Purple Sweet Potato Paste} 
紫薯泥200克 Purple sweet potato paste 200g 
椰浆100克 Coconut milk 100g 

第一层 1st Layer 
紫薯泥 Purple sweet potato paste 
椰浆150毫升 Coconut milk 150ml 
细砂糖20克 Caster sugar 20g 
即溶果冻粉½ 茶匙 Jelly powder ½ tsp 
燕菜粉2 茶匙 Agar powder 2 tsp 
*口感嫩滑细腻,请再加50克清水。Please add additional 50ml of water if prefer smoother texture. 

第二层 2nd Layer 
紫薯水350毫升 Purple sweet potato water 350ml 
细砂糖30克 Caster sugar 30g 
即溶果冻粉½ 茶匙 Jelly powder ½ tsp 
燕菜粉2 茶匙 Agar powder 2 tsp 

第三层 3rd Layer 
清水300毫升 Water 300ml 
细砂糖10克 Caster sugar 10g 
即溶果冻粉1/4 茶匙 Jelly powder 1/4 tsp 
燕菜粉1 茶匙 Agar powder 1 tsp 
*细砂糖喜甜的,请自行再加20-30克。Please add extra 20-30g of caster sugar if prefer sweet jelly. 

{其它材料Other Ingredients} 
大黑子适量 Some basil seeds 
水果适量 Some fruits of your choice 

{做法Directions}  

1. 大黑子用热水泡发5分钟。 水果洗净切小块状备用。Basil seeds soaked in hot water for 5 mins. Fruits clean and cut into desire sizes, set aside. 

2. 紫薯洗净切块蒸熟压成泥状,放入搅拌器加椰浆搅成糊状待用,搅拌器的紫薯泥渣加清水350毫升拌成紫薯水(第二层的浅紫色)。Clean and cut purple sweet potatoes into small pieces, steamed for 25 mins and mashed it, put in blender to blend with coconut milk until smooth texture. Remove from blender and set aside. Add 350ml water in blender to make purple sweet potatoes water ( to use as 2nd layer). 

3. 第一层:紫薯细泥再加椰浆150毫升拌均后,加入细砂糖20克+即溶果冻粉½茶匙+ 燕菜粉2茶匙再次拌均匀,开炉火煮至浓稠即可,过程中请不断搅拌均匀(喜欢口感嫩滑细腻,请自行加清水50毫升)。1st layer: Purple sweet potatoes paste + 150ml of coconut milk to mix well, only add in caster sugar 20g+jelly powder ½ tsp+agar powder 2 tsp to mix well again, then only on the heat to cook the mixture until thicken, stirring few times while cooking in progress (love more smooth texture, please add extra 50 ml of water). 

4. 浓稠后关火放入预备好的模具中,吹风至表面干爽或冷藏大约15分钟才倒入第二层。Once thicken, off heat and pour into molds that well prepared, let cool in room temperature or refrigerator for about 15mins before pour in 2nd layer. 

5. 第二层: 紫薯水350毫+细砂糖30克+即溶果冻粉½茶匙+燕菜粉2茶匙拌均匀后,开炉火煮至沸腾,煮沸后熄火泡冷水降温,倒入模具中,有小泡泡可以用筷子或小汤匙拿走它。2nd layer: Purple sweet potatoes water 350ml+caster sugar30g+jelly powder ½ tsp+agar powder 2 tsp to mix well, turn on the heat and bring it to a boil, once boiling, remove from heat and soak in cold water only put the mixture in the molds, pop/remove the bubbles through chopsticks or spoon. 

6. 第二层表面干爽后,把切好的水果放入摆好, 然后再加上泡好的大黑子。When the 2nd layer slightly set (no liquid), place the well-cut fruits on top, follow by add on some basil seeds. 

7. 第三层: 清水300毫+细砂糖10克+即溶果冻粉1/4茶匙+燕菜粉1茶匙拌均匀后,开炉火煮至沸腾,煮沸后熄火泡冷水降温,慢慢地倒入铺满水果和大黑子的模具中。3rd layer: Water 300ml+caster sugar 10g+jelly powder1/4 tsp+agar powder 1 tsp to mix well, only on the heat and bring to a boil, off heat and soak in cold water, pour the liquid slowly to prevent mess up the fruits or basil seeds. 

8. 放入冰箱冷藏至少3小时以上即可享用。 Keep in the fridge for at least 3 hours or until the jelly has set completely.

紫薯杂粮粥 Mixed Grains Porridge with Purple Sweet Potatoes

  

One pot mixed grains porridge with purple sweet potatoes saved me from my busy day. 紫薯配杂粮熬粥,省事省心省力最最最重要的是省时一锅熟料理👍😍还好天使们不抗拒挺爱喝粥暖胃,爱自己的节奏不忘了兼顾家里的三餐💪🏻 

紫薯杂粮粥 

{材料} 
 紫薯块适量 
三色糙米+小米1杯 
黑豆+绿豆½杯 

{调味料} 
清水7杯 
芝麻油1茶匙 
* 盐适量 

{做法} 
1. 紫薯洗净表皮,去皮切成小块状,用清水清洗,洗几次后沥干水分,上蒸锅蒸25分钟左右。 
2. 先把,黑、绿、三色糙米和小米洗净,接着加入清水和芝麻油搅拌均匀。 
3. 拌均即后就可以按下高压锅煮粥键开煮。 
4. 粥煮好后,加入蒸好的紫薯块趁温热享用(可以调入适量的盐)。 

Mixed Grains Porridge with Purple Sweet Potatoes 

{Ingredients} 
Some purple sweet potatoes pieces 
Tricolor brown rice + millet 1 cup
Black+mung bean ½ cup 

{Seasonings} 
Water 7 cups 
Sesame oil 1 tsp 
*Some salt to taste 

{Directions} 
1. Clean purple sweet potatoes, peel off skin and cut into small pieces, rinse well with water for few times, steam for 25 mins. 
2. Rinse black+mung bean, tricolor brown rice and millet well, add in water and sesame oil to mix well. 
3. After mix well, press the pressure cook button to start cook. 
4. After porridge done cooked, add in steamed purple sweet potatoes (season in some salt).

紫蛋 Purple Sweet Potato Steamed Egg

  

Purple sweet potatoes + steamed eggs is a very quick and easy homemade recipe during super busy days. 水蒸蛋,加点紫薯泥又成了一道吸引天使们家庭味。

萝卜肉碎蒸蛋Carrots Minced Meat Steamed Egg 

紫蛋 

{材料} 
鸡蛋4枚 
紫薯1个 
牛奶125毫升 
清水200毫升 
蜂蜜4汤匙 
枸杞1汤匙 

{做法} 
1. 紫薯洗净表皮,去皮切成小块状,用清水清洗,洗几次后沥干水分, 上蒸锅蒸25分钟左右。 
2. 鸡蛋打入大碗中,加入蜂蜜、牛奶和清水搅拌均匀。 
3. 紫薯块蒸好后压成泥状,放入碗中按平备用。 
4. 鸡蛋液过筛后倒入铺满紫薯泥的碗中,盖上保鲜膜,叉几个小洞后放入蒸锅蒸12分钟。 
5. 蒸好把泡热水5分钟的枸杞子放上简易装饰。 

Purple Sweet Potato Steamed Egg 

{Ingredients} 
Eggs 4pcs 
Purple sweet potato 1 pcs 
Milk 125ml 
Water 200ml
Honey 4 tbsp 
Goji berries 1 tbsp 

{Directions} 
1. Clean purple sweet potatoes, peel off skin and cut into small pieces, rinse well with water for few times,steamed for 25 mins. 
2. Beat eggs gently in large bowl, add in honey, milk and water to whisk gently until well combined. 
3. Mashed the purple sweet potatoes after done steamed, flatten it at bottom of each small bowl. 
4. Strain egg mixture through a fine sieve to remove any solids, divide mixture into 4 small bowls and 1 big bowl, remove air bubbles with a small spoon, cover each bowl with cling film for smooth silky egg surface during steaming, poke few tiny holes and steam for 12 mins. 
5. Put on goji berries after done steamed.

紫薯薄煎饼 Purple Sweet Potato Pancake

Simple mouth-watering Fluffy Purple Sweet Potato Pancakes 简易版的紫薯薄煎饼 

紫薯薄煎饼

{材料} 
紫薯泥80克 
煎饼预拌粉1盒 
牛奶350毫升 

{做法} 
1. 煎饼预拌粉和牛奶搅拌均匀,加入紫薯泥拌均后静置20分钟左右。 
2. 平底锅中火预热后,转小火抹上一层薄薄的无盐牛油,放入适量面糊开始煎薄饼(无盐奶油抹一次即可)。 
3. 每面煎制大约1-2分钟左右或表面冒泡即可翻面,重复煎至面糊用完即可。 

Purple Sweet Potatoes Pancake 

{Ingredients} 
Purple sweet potatoes paste 80g 
Pancake premix 1 box 
Milk 350ml 

{Directions} 
1. In a clean bowl, fold the pancake premix flour with milk until just combined, add in purple sweet potato paste and mix well again, let the mixture sit for 20 mins.
2. Pre-heat a large pan over medium heat, turn to low heat, grease with a thin layer of unsalted butter or oil, and pour enough pancake mixture onto the pan making as many pancakes as will fit (grease with butter or oil 1 time will do). 
3. Cook for about 1-2 mins until bubbles form on the surface, flip the pancake and cook for another 2-3 mins or until fully cooked. Repeat the step until all the pancake mixture is finished.

紫薯花生酱披萨Peanut Butter Purple Sweet Potato Pizza

紫薯花生酱披萨 

{材料} 
即用披萨皮2片 
无盐黄油25克 
花生酱1汤匙 
紫薯泥适量 
马苏里拉芝士200克 

{做法} 
1. 无盐黄油室温融化后加入花生酱拌均匀。 
2. 即用披萨皮抹上花生牛油酱, 接着抹上适量的紫薯泥。 
3. 再铺满马苏里拉芝士,预热烤箱210°C,烤10分钟左右。 

Purple Sweet Potato Peanut Butter Pizza 

{Ingredients} 
Instant pizza crust 2pcs 
Unsalted butter 25g 
Peanut butter 1 tbsp 
Some purple sweet potatoes paste 
Mozzarella cheese 200g 

{Directions} 
1. Unsalted butter let stand in room temperature until soft, add in peanut butter and mix well. 
2. Spreading the peanut butter on instant pizza crust, follow by purple sweet potatoes paste. 
3. Then, top with enough mozzarella cheese, Pre-heated oven 210°C, bake for 10mins.

紫薯豆奶桃胶雪燕皂角米西米露 Soy Milk Purple Sweet Potato Peach Gum XueYan Saponin Rice Sago Dessert

紫薯桃胶雪燕皂角米西米露 

{材料} 
西米60克 
紫薯500克 
桃胶雪燕皂角米组合2小包 
清水1000毫升 
豆奶适量 
*冰糖30克 

{做法}  
1. 桃胶皂角米雪燕独立包装2包(隔夜泡发至少12小时,雪燕分开泡哦) 
2. 隔夜泡好后,简单的清理一下桃胶和雪燕的杂质, 把桃胶皂角米和清水1000毫升先放入高压锅煮12分钟左右。 
3. 紫薯洗净表皮,去皮切成小块状,用清水清洗,洗几次后沥干水分, 上蒸锅蒸25分钟左右。 
4. 一锅清水煮沸后(一定要等水烧开才能放下去),放入西米中小火煮至留有小白点,熄火关盖焖15分钟至透明,焖好的西米用凉水洗2-3遍后沥干备用。 
5. 把雪燕,蒸好的紫薯和西米放入高压锅(想要甜点的,这时加入冰糖), 再煮1分钟即可享用, 加入适量的豆奶拌均颜色更迷人。 

Soy Milk Purple Sweet Potato Peach Gum XueYan Saponin Rice Sago Dessert 

{Ingredients} 
Sago 60g 
Purple sweet potato 500g 
Peach Gum XueYan Saponin Rice Combination 2 small pack 
Water 1000ml 
Some soy milk 
*Rock sugar 30g 

{Directions}  
1. Peach gum/snow lotus seed/snow bird nest individual pack x 2 (soak overnight separately in refrigerator for at least 12 hours) 
2. Simple clean the peach gum and snow bird nest, remove impurities, put peach gum, saponin rice and water 1000ml into pressure cooker to cook for 12 mins. 
3. Clean purple sweet potatoes, peel off skin and cut into small pieces, rinse well with water for few times, drain well and steam for 25 mins. 
4. To cook sago, bring a pot of water to boil (must boiling), only put in sago and cook under medium small heat until you see small tiny white dot in the middle (remember to keep stirring occasionally), turn off heat and covered the pot, let stand for about 15 mins to allow the centre of sago pearl to cook through. Sieve and rinse the cooked through sago with water 2-3 times, drain well. 
5. Follow by add in snow bird nest (XueYan), steamed purple sweet potato and cooked sago in to pressure cooker (if wish to add in rock sugar, add in now), cook for another 1 min and ready to serve, add in right amount of soy milk to have more attracting purple color.

Steamed purple sweet potato water 50ml 
Milk 100ml 
**Can purely use milk or steamed purple sweet potato water, total liquid about 150ml to move the blender considering okay. 

{Directions} 
1. Clean purple sweet potatoes, peel off skin and cut into small pieces, rinse well with water for few times. 
2. Add in water to cover the purple sweet potato pieces, steam for 25 mins or until soft. 
3. Pour in milk and steamed purple sweet potato water blend until smooth puree will do.

亲子家常炒面 Kids Friendly Fried Noodles

亲子家庭味炒面 

{材料} 
面条适量(过热水川烫半分钟左右) 
鱼饼片适量 
胡萝卜丝适量 
鸡蛋3粒(加点胡椒粉打散备用) 
包菜丝适量 
蒜碎1汤匙 
小红葱碎1汤匙 
青葱段适量 

{调味料} 
黑酱油1汤匙 
酱油2汤匙 
蚝油1茶匙 
番茄酱2汤匙 
豆瓣酱½茶匙 
红糖适量 
芝麻油1茶匙 
清水/高汤 ½ 杯 

{做法} 
1. 起油锅先把鸡蛋炒熟备用。 
2. 再起3汤匙油锅爆香蒜葱碎,加入胡萝卜丝、鱼饼、包菜丝和一半调味料拌炒均匀。 
3. 然后,加入面条和另一半的调味料拌炒至上色后加入青葱段和鸡蛋炒均匀或至汁收干即可。 

Kids Friendly Fried Noodles 

{Ingredients} 
Noodles(Blanch over with hot water for 30sec)
Some fish cake slices 
Some shredded carrots 
Egg 3 pcs (beaten with some pepper) 
Some shredded cabbage 
Chopped garlic 1 tbsp 
Chopped shallots 1 tbsp 
Some green onions (sectioned) 

{Seasonings} 
Black soy sauce 1 tbsp 
Soy sauce 2 tbsp 
Oyster sauce 1 tsp 
Tomato sauce 2 tbsp 
Bean paste ½ tsp 
Some brown sugar 
Sesame oil 1 tsp 
Water/broths ½ cup 

{Directions} 
1. Heat up oil to fry the egg mixture till cooked and set aside. 
2. Heat up frying pan with 3 tbsp of olive oil to saute chopped garlic and shallot till fragrant, add in carrots, fish cakes, cabbages plus half of seasonings to stir-fry till well combined. 
3. Then, add in noodles and another half of seasonings to continue stir-frying until well mix only add in green onions and cooked egg to stir fry till gravy is thickening, serve hot.

预拌粉花生牛油饼 Cookies Mix Version Peanut Butter Cookies


能让两个她都愿意“动起来”的亲子活动就是做饼干,学校假期难得突然想起要做饼干,不想扫兴,只好用家里仅有的饼干预拌粉。School holiday activities must have their's first priority: baking favorite cookies. 

预拌粉花生牛油饼 

{材料} 
牛油饼干预拌粉490克 
无盐牛油250克 
花生碎30克 
鸡蛋1个 

{做法} 
1. 无盐牛油室温软化后,低速打发至浅黄色,分两次加入鸡蛋液搅拌均匀。 
2. 分两次筛入预拌粉搅拌均匀后,加入花生碎,再次翻拌均匀。 
3. 揉成软面团,盖好休面10分钟。 
4. 每小份约5克,搓成小球状,按成大小一致的圆形状,或放入饼干模具中塑形,冷藏保存待烤。 5. 提前预热好烤箱上下火(不开风扇)170°C,烤10-13分钟左右即可。 

Cookies Mix Peanut Butter Cookies 

{Ingredients} 
Buttery cookies premix flour 490g 
Unsalted butter 250g 
Peanut powder 30g 
Egg 1 pcs 

{Directions} 
1. Blend room temperature unsalted butter until soften or light yellow color, add in egg mixture and mix well. 
 2. Sifted in cookie premix flour in batches and mix well after each addition, follow by add in peanut powder and mix well again. 
3. Knead into soft dough, cover and let it rest for 10 mins. 
4. Divide soft dough into 5g each portions shaping into small ball, press down to make a circle shape, or direct put the soft dough on the cookies mold for shaping up. Keep refrigerated while waiting to bake. 
5. Pre-heated oven 170°C(without fan), bake for 10-13mins or until lightly browned.

奶香味香蕉核桃蛋糕 Banana Walnut Cakes

  

面包、蛋糕…傻傻分不清楚🫣😅香蕉蛋糕百吃不腻,用纯鲜奶做的香蕉核桃蛋糕有着孩子们大爱的浓郁奶香味儿。Banana cake never disappointed, simply a great recipe to kick start for anyone wish to start to bake for their own.  

奶香味香蕉核桃蛋糕 

{材料} 
熟透香蕉泥350克(提前冷冻保存至少一夜,室温解冻2-3小时使用) 
中筋面粉220克 
红糖80克 
鸡蛋2粒 
无盐融化牛油60克 
盐 ½茶匙 
泡打粉2茶匙 
苏打粉½茶匙 
核桃碎50克 
牛奶100-130毫升 
香草精几滴 

{做法} 
1. 香蕉室温解冻后,压成泥状+红糖+融化无盐黄油+鸡蛋+香草精+粉类搅拌均匀,慢慢地加入牛奶拌均匀后加入核桃碎拌均匀。 
2. 把拌好的蛋糕糊倒入模具中,准备烤。 
3. 预热烤箱170°C, 烤55-60分钟左右,蛋糕出炉待冷后即可切片享用。 

Banana Walnut Cakes 

{Ingredients } 
Ripe banana 350g (Keep frozen overnight, defrost to room temperature 2-3hours) 
All purpose flour 220g 
Brown sugar 80g 
Eggs 2pcs (grade A) 
Melted unsalted butter 60g 
Salt ½ tsp 
Baking powder 2 tsp 
Baking soda ½ tsp 
Chopped walnuts 50g 
Milk 100-130ml 
Vanilla essence few drops 

{Directions} 
1. Defrost banana in room temperature, mash it + brown sugar + melted unsalted butter + eggs + vanilla essence + flour to mix until fully combined, slowly add in milk and mix well, then add in chopped walnuts and mix well again. 
2. Pouring the batter into the cake pan, and get ready to bake. 
3. Pre-heated oven 170°C, bake for 55-60mins. Ready to slice and taste once cakes are completely cool.

波兰种黑芝麻面包 Poolish Black Sesame Bun

 
One dough for different types of bread or bun. 老面,汤种,烫种和波兰种/液种,最爱还是烫种和波兰种。只能选一种的话,就最爱用波兰种,因为它最容易掌握,基本上最吸引我的是完全不需要更改原食谱。Poolish starter is convenient as DO NOT have to amend any original bread/bun recipe, just add in…that it! 
 
波兰种黑芝麻面包 

{波兰种} 
 高筋面粉50克 
干酵母1克 
清水50毫升 

{主面团材料} 
高筋面粉 230克 
黑芝麻馅30-80克 
干酵母3克 
红糖30克 
盐3克 
无盐黄油20克 
鸡蛋55克 
鲜奶90-100毫升 

{抹皮} 
融化无盐牛油 
鸡蛋液 
炼奶+ 融化牛油 

{做法} 
1. 波兰种提前准备好,全部材料拌均后,盖上盖子室温发酵至少3小时后才能用或者室温发酵1小时后移去冰箱冷藏隔夜大约15小时左右再用。 
2. 将全部材料放入面包机内(除了黄油)混合均匀(大约5分钟左右),加入黄油揉至光滑面团和发酵至两倍大(大约50分钟左右)。 
3. 将发酵好了的面团在撒了些面粉的桌面搓圆,分成合适的份量,搓成小球状休面十分钟左右,擀平排气搓成小圆球形状或整形做成各种形状的面包。 
4. 放烘盘上,盖好做二次发酵(约50分钟),抹上融化牛油/全蛋液/炼奶+融化牛油等。 
5. 预热烤箱170°C, 烤25分钟左右。 

Poolish Black Sesame Bun 

{Poolish} 
Bread flour 50g 
Instant yeast 1g 
Water 50g 

{Main Ingredients} 
Bread flour 230g 
Black sesame paste 30-80g 
Instant yeast 3g 
Brown sugar 30g 
Salt 3g 
Unsalted butter 20g 
Egg 55g Milk 90-100ml 

{Glazing} 
Melted unsalted butter 
Egg mixture 
Condensed milk +Melted unsalted butter 

{Directions} 
1. Prepare the poolish starter in advance, cover and set aside to let it fermented for at least 3 hours or 1 hour room temperature and then move to refrigerated for 15 hours only use. 
2. Mix all ingredients in a bread machine(except butter) till well combined, add in butter and let it knead until a smooth dough forms and well fermented (about 50 mins). 
3. Transfer dough onto a floured surface, shaped round and divide dough into equal portions, shaping up to small ball, let it rest for 10 mins only flatten and shape to smooth ball shape or any desired shape. 
4. Cover and leave aside to prove till double in bulk (about 50mins), glaze with melted butter, egg wash / condensed milk + melted butter on top. 
5. Pre-heated oven 170°C, bake for 25mins.

油豆腐茄子焖饭 One Pot Tofu Puff Eggplant Rice

油豆腐茄子焖饭 

{材料} 
油豆腐适量 
木耳菜适量 
茄子2 条 
小胡萝卜适量 
白米两杯 
鸡蛋2粒 
青葱丁适量 
蒜碎1汤匙 
小红葱碎1茶匙 
姜碎1茶匙 


{调味料}  
料酒1茶匙 
煮两杯米的水 
甜酱油1汤匙 
酱油 2 大匙 
黑酱油1大匙 
蚝油1大匙 
鱼露1茶匙 
麻油1茶匙 
盐1茶匙 
红糖1茶匙 
胡椒粉½茶匙, 混合均匀 
**香菇水/清水/高汤50毫升+酱油1汤匙+蚝油½大匙 

{做法} 
1. 白米两杯(洗净,沥干加入1汤匙橄榄油拌均备用; 鸡蛋2粒(加入一点胡椒粉,酱油和芝麻油打散备用; 木耳菜泡发好,切丝; 小胡萝卜切成小段; 油豆腐切成小块;茄子洗净切片后泡盐水(要炒时,沥干茄子的水分)。 
2. 烧热油, 爆香蒜葱与姜碎, 料酒炝锅后加入木耳丝和茄子块炒香, 接着加入萝卜,倒入酱油+蚝油+适量的清水以中大火略炒均后加油豆腐, 倒入洗净白米的其他调味料炒一炒熄火后转移到电饭锅,再加入剩下的煮米水。使用煮饭的设定煮熟。 
3. 饭煮好前的3-5分钟,倒入加了点青葱丁的鸡蛋液快速翻拌均匀,煮熟趁热享用。 

One Pot Tofu Puff Eggplant Rice 

{Ingredients} 
 Some tofu puff 
Some black fungus 
Eggplant 2pcs 
Some baby carrots 
Rice 2 cups Eggs 2 pcs 
Some diced green onions 
Chopped garlic 1 tbsp 
Chopped shallots 1 tsp 
Chopped ginger 1 tsp 


{Seasonings }  
 Cooking wine 1 tsp 
Water to cook 2 cups of rice 
Sweet soy sauce 1 tbsp 
Soy sauce 2 tbsp 
Black soy sauce 1 tbsp 
Oyster sauce 1 tbsp 
Fish sauce 1 tsp 
Sesame oil 1 tsp 
Salt 1 tsp 
Brown sugar 1 tsp 
Pepper ½ tsp, mix all well. 
**Mushrooms water/water/broth 50 ml+soy sauce 1 tbsp+oyster sauce ½tbsp 

{Method} 
1. White rice 2 cups (washed and drain well, add in 1tbsp of olive oil to mix well and set aside), egg 2 pcs (beaten with some sesame oil, soy sauce and pepper), soaked black fungus and sliced, baby carrots cut into small pcs, tofu puffs cut into small pcs, eggplants cut into pcs and soaking in salty water (squeeze dry once plan to start frying). 
2. Heat up oil to saute chopped garlic, shallot, and ginger, add in cooking wine then follow by black fungus and eggplant to stir-fry until fragrant, add in baby carrot, pour in soy sauce + oyster sauce +some water and stir frying under medium high heat for a while only add in tofu puffs, add in white rice and leftover seasonings until well combine, transfer everything into rice cooker, press start cook button to cook. 
3. Before rice is done cooked in 3-5 mins, add in egg mixture that with some diced green onions and let it sit for few more mins before serving. Serve hot.

木耳炒面 Fried Noodles with Black Fungus


Quick and easy meal ideas👉🏻 Fried Noodles with Black Fungus. 食材简单,做法简易快手的一餐,上班上学天太需要凡事快一点,但不影响活得精彩💪🏼

木耳炒面 

{材料} 
面4块 
黑木耳适量 
肉丝适量 
胡萝卜丝适量 
鱼饼丝适量 
鸡蛋4粒 
青葱丁适量 
青水/高汤适量 
小红葱碎适量 
蒜碎适量 
*猪油+橄榄油 

{调味料} 
料酒1汤匙 
盐½茶匙 
酱油2汤匙 
黑酱油1茶匙 
蚝油1汤匙 
番茄酱1汤匙 
芝麻油1茶匙 
胡椒粉适量 

{做法} 
1. 木耳菜泡发好切丝,鸡蛋加点盐和胡椒粉打散待用,面条用加了点盐和橄榄油的沸水汆烫1分钟后过凉水待用。 
2. 起1汤匙油锅爆香一茶匙小红葱碎,倒入鸡蛋液炒熟待用。 
3. 再起两汤匙油锅爆香蒜葱碎,料酒炝锅后加入木耳菜和肉丝炒一炒, 加入鱼饼和胡萝卜丝再炒一下,调入盐和适量清水,继续调入酱油,黑酱油,蚝油和番茄酱,接着倒入面条翻炒均匀。 
4. 接着,调入芝麻油和胡椒粉再次炒均匀。 
5. 最后,加入鸡蛋和青葱丁拌炒均匀即可。 

Fried Noodles with Black Fungus 
{Ingredients} 
Noodles 4 pcs 
Some black fungus 
Shredded meats 
Some shredded carrots 
Some shredded fish cakes 
Eggs 4 pcs 
Some diced green onions 
Some water/ broth 
Some chopped shallots 
Some chopped garlic 
*Lard+olive oil 

{Seasonings} 
Cooking wine 1 tsp 
Salt ½ tsp 
Soy sauce 2 tbsp 
Black soy sauce 1 tsp 
Oyster sauce 1 tbsp 
Tomato sauce 1 tbsp 
Sesame oil 1 tsp 
Some pepper to taste 

{Directions} 
1. Soaked black fungus till double in size and shredded, beaten eggs with some salt and pepper, blanch noodles with boiling water that add with some salt and olive oil for 1 min, drain well, soak in cold water a while, drain well again, and set aside. 
2. Heat up olive oil to sauté chopped shallots, pour in egg mixture and frying until cooked. 
3. Heat up olive oil to saute garlic, season in cooking wine follow by add black fungus and meats to stir-fry, then add fish cake and carrots, season in salt and some water, then soy sauce, black soy sauce, oyster sauce and tomato sauce, follow by add in noodles to continue stir frying under medium low heat until well combine. 
4. Season in sesame oil and some pepper and mix well. 
5. Lastly, add in cooked eggs and green onions to mix well. Serve hot.

番茄炒蛋 Scrambled Eggs and Tomatoes

Q弹滑口,水份刚刚好的番茄/西红柿炒鸡蛋,最家常的一道菜。 Making a simple but delicious dish called "Scrambled eggs with tomatoes”. It's delicious and goes well with rice or noodles. 西红柿炒鸡蛋,合格吗❓How To Cook Tomatoes Eggs: too runny, watery, or simply overcooked…J is passed or not?! 

番茄炒鸡蛋 

{材料} 
番茄3粒 
鸡蛋5粒 
玉米淀粉水 
青葱丁适量 
*清水50毫升 
*蒜碎1茶匙 
*料酒1茶匙 

{调味料} 
盐1/4 茶匙 
椰糖1茶匙 

{做法} 
 1. 鸡蛋加料酒+ 玉米淀粉水(盐、芝麻油和胡椒粉随意)打散至起泡泡。 
2. 起油锅, 下青葱炒香,倒入鸡蛋液不停地翻炒均匀,鸡蛋一炒熟马上熄火盛起备用。 
3. 起油锅爆香青葱丁,番茄块倒进去翻炒,调入椰糖,炒番茄的时间稍微长一点,直到炒出番茄本身的汤汁, 如果太干适量加点清水。 
4. 加入鸡蛋,翻炒,让鸡蛋吸收番茄的汤汁,调入盐炒均。 
5. 出锅之前加倒入剩下的玉米淀粉水勾芡即可,趁热享用。 

Scrambled Eggs and Tomatoes 

{Ingredients } 
Tomatoes 3 pcs 
Eggs 5 pcs 
Corn flour solutions 
Diced green onions 
*Water 50 ml 
*Chopped garlic 1 tsp 
*Cooking wine 1 tsp 

{Seasonings} 
Salt 1/4 tsp 
Palm sugar/gula melaka 1 tsp 

{Directions} 
1. Break the eggs into a bowl, beat the eggs with cooking wine + corn flour solution(salt, sesame oil, ground white pepper optional) and stir to mix well. 
2. Heat up olive oil to saute diced green onions, pour in egg mixture and keep stirring the beaten eggs until cooked, as soon as the eggs are cooked, dish out and set side. 
3. Heat up oil to saute green onions, add in diced tomatoes and stir-fry until soft, season in Gula Melaka and add in a little water if too dry. 
4. Add in the cooked eggs and stir-fry until cooked through, season in some salt to taste. 
5. Thicken with leftover corn flours solution, serve warm hot.

椰肉西芹木耳菜 Coconuts with Mixed Vegetables

  

买嫩椰子喝完椰水后,除了生吃就不知道还有什么做法吗?除了煲汤,椰子肉还有挺多的简单家常做法哦。 记得椰子肉别扔掉,刮一刮其实不太麻烦,烦的是该想想家里有什么食材搭配。椰肉炒什么菜好吃呢…木耳、西芹、山药等都是清爽不腻的简易组合哦。 配料随意:枸杞、胡萝卜、甜椒、菇菌类、鸡蛋等都行耶。What to do with young coconut meat after enjoying a fresh coconut water? Besides to use it cooking soup, there is still lots more easy veggies mixed recipes. 

椰肉西芹木耳菜 

{材料} 
 椰肉片(1颗椰子) 
西芹片/山药片适量 
木耳菜适量 
红甜椒丁/枸杞子适量 
橄榄油2汤匙 
蒜碎1汤匙 
*胡萝卜丝适量 

{调味料} 椰水5汤匙 鲍鱼汁1茶匙 盐适量 

{做法} 
1. 木耳菜用沸水汆烫30秒,西芹片用加了点盐和橄榄油的沸水汆烫1分钟后过凉水待用。 
2. 起油锅爆香蒜碎,加入木耳菜炒一炒后加入椰肉,调入鲍鱼汁,盐和椰水炒一下,继续加入西芹片翻炒均匀后中小火煮1-2分钟。 
3. 最后,加入甜椒丁再次炒均煮沸即可。 

Coconuts with Mixed Vegetables 

{Ingredients} 
Coconut meat (shredded, 1 coconut) 
Shredded celery/ Chinese yam 
Black fungus pieces 
Diced red bell pepper/ gojiberries 
Olive oil 2 tbsp 
Chopped garlic 1 tbsp 
*some shredded carrots 

{Seasonings} Coconut water 5 tbsp Abalone sauce 1 tsp Some salt to taste 

{Directions} 
1. Blanch over the black fungus with boiling water for 30 seconds, celery with boiling water that add with some salt and olive oil for 1 min, drain well, soak in cold water a while, drain well again, and set aside. 
2. Heat up olive oil to saute garlic, add black fungus to stir-fry, then add coconut meat, season in abalone sauce, salt and coconut water, follow by add in celery to continue stir frying under medium low heat for 1-2 mins. 
3. Lastly, add in diced bell pepper to mix well and bring to boil again. Serve hot.

紫薯杯子蛋糕 Purple Sweet Potato Cupcakes


紫薯+蛋糕预拌粉解决了突然想吃小甜点的感觉。Cake mix save sweet tooth time, purple sweet potato 
cupcakes ready just in time😘💜 

紫薯杯子蛋糕 

{材料} 蛋糕预拌粉1盒,清水/牛奶250毫升,玉米油125毫升,鸡蛋3粒(A级),蒸熟紫薯泥50克。 

{做法} 
1. 紫薯提前洗净切好蒸熟,压成泥状待用。 
2. 鸡蛋+蛋糕粉+水+油+紫薯泥中速搅拌均匀后,转去高速搅拌至出现纹路,滴下能几秒定型即可。 
3. 把拌好的蛋糕糊倒入杯子蛋糕的纸杯中,大力震几下消消大气泡后准备烤。 
4. 预热烤箱150°C, 烤35分钟左右。 
5. 蛋糕出炉待冷后即可享用。 

Purple Sweet Potato Cupcakes 

{Ingredients } Cake mix 1 box, water/milk 250ml, corn oil 125ml, egg 3pcs (grade A), steamed purple sweet potato 50g. 

{Directions} 
1. Steam purple sweet potato, mashed into paste and set aside. 
2. Whisk eggs + cake mix + water + oil + purple sweet potato paste under medium speed until mix well, turn into high speed to whisk until fully combined. 
3. Pouring the batter into the paper cups, knock out the big bubbles and get ready to bake. 
4. Pre-heated oven 150°C, bake for 35mins. 
5. Ready to taste once cupcakes are completely cool.
